Violation: THERE WAS NO RECORD AVAILABLE OF THE MICROBIOLOGICAL TEST FOR E. COLI BACTERIA FROM EACH PORT WHERE THE SHIP BUNKERED POTABLE WATER.
Recommendation: Where available, the vessel shall have a copy of the most recent microbiologic report from each port before bunkering potable water to verify that the water meets potable standards.

Violation: FOUR POTABLE WATER SAMPLES FROM THE DISTRIBUTION SYSTEM WERE NOT COLLECTED AND ANALYZED MONTHLY FOR THE PRESENCE OF E. COLI BACTERIA.
Recommendation: A minimum of four potable water samples per month shall be collected and analyzed for the presence of Escherichia coli. Samples shall be collected randomly from locations forward, aft, upper, and lower decks of the vessel.

Violation: ALTHOUGH FREE RESIDUAL CHLORINE MONITORING WAS PERFORMED DURING ONBOARD POTABLE WATER PRODUCTION, NO RECORD FOR SAME WAS AVAILABLE.
Recommendation: Free residual halogen monitoring shall be performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Recommendation: Accurate records of this monitoring shall be maintained aboard for 12 months and shall be available to the VSP for review during inspections.

Violation: ALTHOUGH THERE WAS A HEALTH RISK WARNING AT THE SPAS, IT DID NOT WARN AGAINST USE BY PARTICULARLY SUSCEPTIBLE PEOPLE, SUCH AS THOSE WHO ARE IMMUNOCOMPRIMISED. NEW SIGNS HAVE BEEN ORDERED.
Recommendation: A sign shall be installed near the whirlpool spas that lists standard safety precautions and risks, warning against use by particularly susceptible people, such as those who are immunocompromised.

Recommendation: Halogen analyzer-chart recorders used in lieu of manual tests, and logs shall be calibrated daily, and the calibration shall be recorded on the chart or in a log book.

Recommendation: The free residual halogen shall be increased to at least 10.0 mg/L (ppm) in whirlpool spas and circulated for at least 1 hour at the end of each day.

Violation: THE SUITE CABIN TUBS WERE NOT BEING "SHOCK TREATED" WITH A HALOGEN LEVEL THAT WAS 10MG/L (10PPM) AND RECIRCULATED FOR AT LEAST ONE HOUR BETWEEN OCCUPANCIES.
Recommendation: The free residual halogen shall be increased to at least 10.0 mg/L (ppm) in whirlpool spas and circulated for at least 1 hour between occupancies.

Violation: THE CORNELLIUS ICE MACHINE HAD AN ABSORBENT GASKET BETWEEN THE ICE MAKER AND THE BIN.
Recommendation: Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: THE CUTTING BOARDS ON THE COUNTER WERE DIFFICULT TO CLEAN DUE TO KNIFE CUTS IN THE ACRYLIC AND THEY WERE STAINED.
Recommendation: Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: THE DOOR GASKET ON THE PROOFER WAS IN DISREPAIR. THIS WAS CORRECTED DURING THE INSPECTION.
Recommendation: Nonfood-contact equipment shall be maintained in good repair and proper adjustment including: (2) Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Violation: THE TECHNICAL COMPARTMENT BEHIND THE FRONT COVER OF THE VITALITY JUICE DISPENSER WAS DIFFICULT TO CLEAN AND SUBJECT TO SPILL/SPLASH.
Recommendation: Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: DATA PLATES WERE NEEDED FOR BOTH THE GLASSWASH AND WAREWASH MACHINES.
Recommendation: A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Violation: MANY OF THE WIPING CLOTHS USED TO CLEAN SPILLS AND TABLE TOPS WERE SET ON THE WAITER STATIONS BETWEEN USES. CLOTHS WHICH WERE STORED IN BUCKETS HAD A SOAP SOLUTION ONLY WITH NO SANITIZER AND THE SOLUTION WAS VISIBLY DIRTY IN SOME CASES.
Recommendation: Wiping cloths shall be restricted to the following: (2) Cloths used for wiping food spills shall be dry and used for wiping food spills from tableware and single-service articles or wet and cleaned, stored in a chemical sanitizer, and used for wiping spills from food-contact and nonfood-contact surfaces of equipment.

Recommendation: Decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, shall be cleaned as often as necessary.

Recommendation: Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service, and single-use articles.

Violation: ARTIFICIAL LIGHT LEVELS ALONG THE FRONT BAR PREPARATION COUNTER COULD NOT BE RAISED TO 20 FOOT CANDLES (220 LUX).
Recommendation: The light intensity shall be at least 220 Lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

Violation: THERE WAS NO WRITTEN IPM PLAN, NO SET MONITORING INSPECTIONS OR PEST SIGHTING LOGS, NO TRAINING RECORDS FOR THE PEST APPLICATOR, AND NO RECORD OF THE EFFECTIVENESS OF THE PESTICIDES USED.
Recommendation: Each vessel shall develop an Integrated Pest Management Plan to address effective monitoring and control strategies for pests aboard the vessel. The Integrated Pest Management Plan shall set a schedule for periodic monitoring inspections including some at night. The Integrated Pest Management Plan shall include a record of pesticides used and their effectiveness. The training of the pest-control personnel shall be documented in the Integrated Pest Management Plan.

Violation: A SIGN WAS NEEDED TO REMIND STAFF TO WASH THEIR HANDS AFTER CHANGING A DIAPER AND AFTER ASSISTING CHILDREN WITH THE TOILET.
Recommendation: Signs shall be posted in the diaper-changing area advising child-activity center staff to wash their hands after each diaper they change. Signs shall be posted in children's toilet room advising the providers to wash their hands and the children's hands after assisting children use the toilet.
