Recommendation: 4.2.1.1.1 The master, the medical staff, or other designated staff of a vessel destined for a U.S. port from a foreign port shall submit at least one standardized gastrointestinal illness report based on the number of reportable cases in the gastrointestinal illness log to the VSP no less than 24 hours, but not more than 30 hours before the vessel's expected arrival at the U.S. port.

Recommendation: 6.2.2.2.3 / 6.3.2.2.3 Halogen analyzer-chart recorders used in lieu of manual tests, and logs shall be calibrated daily, and the calibration shall be recorded on the chart or in a log book. 6.2.2.2.5 / 6.3.2.2.5 Halogen analyzer-chart recorder charts shall be initialed, dated, and changed daily.

Violation: BLUE PLASTIC COATED SERVING BOWLS IN POOR REPAIR. PLASTIC WAS ABRADED ON SEVERAL.
Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Recommendation: Nonfood-contact equipment shall be maintained in good repair and proper adjustment including: (2) Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Violation: THE DATA PLATES ON NUMEROUS WAREWASHING MACHINES ARE WORN MAKING THEM DIFFICULT TO READ.
Recommendation: Replace the difficult to read data plates. 7.5.2.2.3 A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Violation: THE WATER TEMPERATURE IN THE SANITIZING SINK WAS MEASURED AT 152 F AND THE CHLORINE CONCENTRATION IN THE POT WASHING MACHINE WAS AT OR ABOVE 200 PPM. THIS AREA WAS IN ACTIVE USE AT THE TIME.
Recommendation: 7.5.6.1.1 In a manual operation, if immersion in hot water is used for sanitizing: (1) The temperature of the water shall be maintained at 77C, (171F) or above; and (2) The food-contact surface shall be immersed for at least 30 seconds. 7.5.6.2.3.1 The sanitizing solutions shall be used with the following concentrations: (1) A chlorine solution shall have a concentration between 50 mg/L (ppm) and 200 mg/L (ppm).

Violation: NUMEROUS PREVIOUSLY CLEANED BAKING PANS WERE FOUND SOILED WITH FOOD RESIDUE IN THEIR CORNERS AND STORED AS CLEAN.
Recommendation: 7.5.5.1.2 The food-contact surfaces of cooking equipment and pans shall be kept free of encrusted grease deposits and other soil accumulations. 7.5.5.1.1 Food-contact surfaces of equipment and utensils shall be clean to sight and touch.

Violation: THERE WAS AN OPEN SEAM WHERE THE WORK COUNTER ON THE UNDERCOUNTER REFRIGERATORS (FRIDGE 4 SAUCES) JOINED THE BULKHEAD. ATTEMPTS HAD BEEN MADE TO SEAL THIS SEAM WITH SILICON SEALANT BUT IT WAS TO LARGE.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning. Re-weld the backsplash to close the gap before applying additional sealant.

Violation: THERE WAS WATER NOTED DRIPPING FROM THE DECKHEAD MOUNTED SPEAKERS IN THE WALK-IN REFRIGERATOR AND BY THE POT WASH AREA. THE SPEAKER IN THE WALK-IN WAS SOILED WITH A PINK SLIME.
Recommendation: Investigate the cause of the dripping water and repair the cause. Clean the speakers to remove the slime. 7.7.4.2.3 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, shall be maintained in good repair.

Violation: THERE WERE NUMEROUS GAPS AND SEAMS BETWEEN EQUIPMENT, ON BULKHEADS, AND DECKHEADS. ATTEMPTS WERE MADE TO SEAL THE SEAMS WITH SEALANT BUT IN MANY AREAS THE SEALANT IS PEELING MAKING THE AREAS DIFFICULT TO CLEAN.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.
