Violation: A DAMAGED FIFTY POUND BAG OF CORN MEAL WAS STORED UNSECURED. THE BAG WAS REMOVED.
Recommendation: 7.3.3.5.1 Food shall be protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE CONDIMENT DISPLAY CASE WAS SEVERELY CHIPPED AND CRACKED.
Recommendation: 7.4.2.2.6 Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: CONDENSATE BUILDUP WAS NOTED IN THE VENTILATION HOOD AREA.
Recommendation: 7.7.6.1.2 Ventilation hood systems and devices shall operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them.

Violation: LIGHT CONDENSATE WAS NOTED IN THE VENTILATION HOOD.
Recommendation: 7.7.6.1.1 All food preparation, warewashing, and toilet rooms shall have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes.
