Site: Other-POTABLE WATER
Violation: ON 3/13/04 AND 3/20/04 THE ANALYZER-CHART RECORDER CHARTS INDICATED THAT POTABLE WATER WAS BUNKERED BELOW 2.0 PPM FOR SEVERAL HOURS EACH DAY. THE ENGINEER STATED THAT SOMETIMES PROBLEMS WITH WATER FLOW CAN CAUSE THE CHLORINE LEVEL TO DROP BELOW 2.0 PPM.
Recommendation: 5.2.1.1.1 Potable water shall be continuously halogenated to at least 2.0 mg/L (ppm) free residual halogen at the time of bunkering or production with an automatic halogenation device.

Violation: THE X-RAY DEVELOPER DID NOT APPEAR TO HAVE A BACKFLOW PREVENTION DEVICE ON THE POTABLE WATER INLET LINE.
Recommendation: 5.7.1.2.6 Backflow preventers shall be provided on all fixtures using potable water and which have submerged inlets. Assure that the device installed is approved for this application.

Violation: THE SNEEZE SHIELDS DID NOT HAVE SIDE PANELS TO PROTECT THE FOOD STORED BENEATH.
Recommendation: 7.3.3.6.1 Food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means.

Violation: CORROSION WAS NOTED IN THE CUBER AREA OF THE ICE MACHINE.
Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: THE BULK MILK CONTAINER DISPENSING TUBES WERE NOT CUT AT AN ANGLE.
Recommendation: 7.4.5.3.2 The bulk milk container dispensing tube shall be cut on the diagonal leaving no more than 3 centimeters (1 inch) protruding from the chilled dispensing head.

Violation: AN ABSORBENT GASKET WAS NOTED BETWEEN THE UPPER AND LOWER COMPARTMENTS OF THE ICE MACHINE. THIS GASKET WAS RETAINING WATER.
Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: A COPPER FITTING WAS NOTED BETWEEN THE BACKFLOW PREVENTION DEVICE AND THE CARBONATOR. THIS WAS REPAIRED DURING THE INSPECTION.
Recommendation: 7.4.1.1.5 Copper and copper alloys such as brass: (1) May not be used in contact with a food that has a pH below 6 such as vinegar, fruit juice, or wine or for a fitting or tubing installed between a backflow prevention device and a carbonator.

Violation: CONDENSATE FROM THE VENTILATION HOOD WAS DRIPPING ONTO CLEAN GLASSES AS THEY EXITED THE GLASSWASH MACHINE.
Recommendation: 7.5.7.3.1 Cleaned equipment and utensils, laundered linens, and single-service and single-use articles shall be stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: A HANDWASHING FACILITY WAS NOT LOCATED WITHIN 8 METERS (25 FEET) OF THE CARVING STATIONS ON THE BUFFET LINES.
Recommendation: 7.7.1.1.1 Each food preparation area, bar, warewashing area, and garbage-processing area shall have at least one handwashing facility located in it. 7.7.1.1.2 The handwashing facility shall be located within 8 m (25 feet) of all parts of the area and should not be located in an adjacent area that requires passage through a closed door.

Violation: THE VENTILATION HOOD ABOVE THE GLASSWASH UNIT DID NOT ADEQUATELY REMOVE THE CONDENSATE.
Recommendation: 7.4.2.4.1 Exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.
