Violation: SEVERAL BOXES OF LIQUOR WERE FOUND SETTING DIRECTLY ON THE DECK IN LIQUOR STOREROOM #9.
Recommendation: 7.3.3.5.1 Food shall be protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: PAINT AND TAPE WERE LOOSE AND PEELING FROM THE DECK HEADS OVER THE BUFFET LINES THROUGHOUT THE WINDFALL CAF, INCLUDING OVER EXPOSED READY-TO-EAT FOODS, SUCH AS BREADS.
Recommendation: 7.3.3.5.1 Food shall be protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE LARGE FLOOR MOUNTED MIXER WAS LABELED OUT OF ORDER AND HAS BEEN OUT OF ORDER FOR APPROXIMATELY 3 MONTHS AWAITING PARTS.
Recommendation: Repair the mixer.

Violation: A PINK RESIDUE WAS FOUND ON THE TOP SURFACE OF THE CLEAN END OF THE GLASS WASH MACHINE.
Recommendation: 7.5.4.1.2 A warewashing machine; the compartments of sinks, basins, or other receptacles used for washing and rinsing equipment, utensils, or raw foods, or laundering wiping cloths; and drainboards shall be cleaned: (1) Before use; (2) Throughout the day at a frequency necessary to prevent recontamination of equipment and utensils and to ensure that the equipment performs its intended function; and (3) If used, at least every 24 hours.

Violation: THE DISHWASHERS AND GLASSWASHERS FINAL RINSE TEMPERATURES AT THE MANIFOLDS INDICATED THAT THE TEMPERATURE WAS GREATER THAN 200F. THE DISH SURFACE TEMPERATURES RANGED FROM 170 - 180F.
Recommendation: 7.5.6.1.2 In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 90C (194F). Recommend maintaining the sanitizing rinse at between 160 - 165F measured at the dish surface.

Recommendation: 7.7.1.3.1 Handwashing facilities shall be used for no other purpose and shall be accessible at all times.

Violation: THE DECK THROUGHOUT THE MAIN GALLEY HAD CRACKED AND BROKEN TILES MAKING THE AREA DIFFICULT TO CLEAN. IT WAS STATED THAT TILE WORK IS PLANNED FOR THE UPCOMING DRY DOCK SCHEDULED FOR JANUARY 2005.
Recommendation: Replace the cracked and broken deck tiles.

Violation: THE PORT AND STARBOARD OMELET STATIONS DID NOT HAVE VENTILATION HOOD SYSTEMS TO EFFECTIVELY PREVENT GREASE AND CONDENSATE FROM COLLECTING ON THE BULKHEADS AND DECK HEADS AND REMOVE VAPORS CREATED BY THE USE OF THE INDUCTION COOK-TOPS.
Recommendation: 7.7.6.1.2 Ventilation hood systems and devices shall operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them.

Violation: THE UNUSED EQUIPMENT WAS NOTED IN THE FOLLOWING AREAS: PANTRY BUFFET - SMALL FLOOR MIXER POULTRY PREPARATION - MEAT GRINDER AND SMALL BAND SAW FISH PREPARATION - MEAT GRINDER AND SMALL BAND SAW THESE ITEMS ARE NOT USED AND IT IS NOT ANTICIPATED THAT IT WILL BE NEEDED IN THE FUTURE.
Recommendation: Recommend removing this equipment.
