Violation: THE POTABLE WATER HALOGENATION LOGS WERE OUTSTANDING. DURING A 4 DAY PERIOD THE FAR POINT ANALYZER/RECORDER WAS NOT ACCURATELY RECORDING THE HALOGEN LEVELS. THE VESSEL'S POLICY, REQUIRING BRIDGE PERSONNEL TO MANUALLY MEASURE AND RECORD THE HALOGEN LEVELS AT THE FAR POINT EVERY HOUR ENSURED THAT DURING THIS PERIOD CONSISTENT RECORDS WERE MAINTAINED.

Violation: THERE WAS NO DOCUMENTATION OF PERIODIC INSPECTIONS OF THE NON-TESTABLE BACKFLOW PREVENTION DEVICES. THERE WAS A COMPUTERIZED LISTING OF BOTH TESTABLE AND NON-TESTABLE BACKFLOW PREVENTION DEVICES AND LOCATIONS ONBOARD.
Recommendation: Maintain a record of routine inspections of the non-testable backflow prevention devices. The periodicity of these inspections should be developed either by the vessel or the cruise line.

Violation: THE FOLLOWING AREAS HAD POTABLE WATER PIPING THAT WAS NOT STRIPED BLUE: AFT POOL PUMP ROOM - POTABLE WATER SUPPLY LINE TO THE SPACE. GARBAGE ROOM - POTABLE WATER LINES TO THE HANDWASHING STATION.
Recommendation: 5.3.2.1.1 Potable water piping shall be painted light blue or striped with 15 cm (6 inches) light blue bands or a light blue stripe at fittings on each side of partitions, decks, and bulkheads and at intervals not to exceed 5 m (15 feet) in all spaces, except where the decor would be marred by such markings.

Violation: PER THE CHEF, RAW MUSSELS WERE OBTAINED AND SERVED WHILE THE VESSEL WAS IN ALASKA. THE SHELLSTOCK TAGS WERE NOT AVAILABLE FOR THE RAW MUSSELS THAT WERE SERVED IN ALASKA.
Recommendation: 7.3.2.3.2 Shellstock shellfish tags shall: (1) Remain attached to the container in which the shellstock are received until the container is empty. (2) Be maintained by retaining shellstock tags or labels for 90 calendar days from the date the container is emptied by using an approved record keeping system that keeps the tags or labels in chronologic order correlated to the date when the shellstock are served.

Violation: SHREDDED CHEDDAR CHEESE WAS TESTED AT 45F IN REFRIGERATION UNIT 4.6. THE THERMOMETER IN THIS UNIT NOTED 40F. MILK IN THE COFFEE MACHINES WAS TESTED AT 60F. THE THERMOMETERS IN THESE UNITS NOTED 50F. THE CHEESE WAS REMOVED TO THE BLAST CHILLER. THE MILK WAS IN THE UNITS FOR LESS THAN 4 HOURS.
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F); (2) At 5C (41F) or less.

Violation: THE CREWMEMBER SANITIZING EQUIPMENT WAS IMMERSING THE ITEMS FOR LESS THAN THE REQUIRED 7 SECONDS. THIS WAS CORRECTED IMMEDIATELY.
Recommendation: 7.5.6.2.2 A chemical sanitizer shall be used in accordance with the EPA-approved manufacturer's label use instructions at a minimum temperature of 24C (75F) with an exposure time of 7 seconds for a chlorine solution and 30 seconds for other chemical sanitizers.

Violation: THE CLEAN END OF THE DISHWASH UNIT NEAR THE ENTRANCE TO THIS AREA WAS VERY HOT AND HUMID. THE TEMPERATURE WAS APPROXIMATELY 91.5 F AND THE WORKER AT THIS STATION WAS SWEATING PROFUSELY.
Recommendation: 7.7.6.1.1 All food preparation, warewashing, and toilet rooms shall have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes.
