Site: Other-MAIN GALLEY
Violation: The ice machine condenser was cooled with seawater and was located directly above the ice bin.
Recommendation: Ice machines with condensers inside the units that are saltwater cooled must be converted to freshwater for cooling. As an alternative, condensers can be removed from within a unit and reinstalled on the outside to prevent possible contamination of the ice from leaking saltwater lines.

Violation: The interior of the 3-door, upright refrigerator and the interiors of the ovens had some non-easily cleanable gaps, seams, and corroded parts and internal components which were difficult to clean. Also, some rust existed between the ice maker and bin of the ice machine.
Recommendation: Food-contact and ice-contact surfaces must be constructed of materials that are nontoxic, smooth, corrosion-resistant, nonabsorbent, and durable under conditions of normal use. Food-contact surfaces also must be easily cleanable and free of difficult-to-clean internal corners, crevices, and fasteners.

Violation: Many non-easily cleanable features existed with regards to non-food contact surfaces of equipment. These included open seams and gaps between pieces of equipment and chipped or rough wood and formica cabinets.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Violation: The shelving was constructed of rough wood finish.
Recommendation: The shelving shall be constructed of stainless steel or a smooth plastic to facilitate ease of cleaning. This should be a lower priority then the galley equipment.

Site: Other-MAIN GALLEY & DRYSTORES
Violation: The bulkheads and deckheads had non-easily cleanable features such as open seams, gaps, and holes. In addition, the floor tiles in the Drystores were badly chipped and cracked.
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean.
