Site: Other-MAIN GALLEY - DISHWASHING
Violation: Several plates and silverware items were exiting the large dishwashing machine with a heavy residue of egg product on their surfaces. Pre-scraping in this area was inadequate.
Recommendation: Dishes and utensils shall be flushed or scraped before entering the washing cycle of the machine. This does not preclude the use of an automatic prewash cycle.

Violation: The grouting material between the deck scuppers and the floor tiles was cracked and eroding in many areas.
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean.

Violation: The grouting material at the base of the proofer cabinet had cracked and erooded allowing moisture and food debris to seep under the proofer cabinet deck plating.
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean.
