Item No.: 4
Site: Other-GALLEYS-DECKS 4 AND 5
Violation: A few of the coffee and cappuccino machines that were connected to a water supply line with a filter were missing pressure-type backflow preventers.
Recommendation: Provide pressure-type backflow preventers on water supply lines with in-line filters to coffee and cappuccino machines. Locate the preventers upstream of the filters. Vacuum breakers and backflow preventers must be properly installed and maintained in good repair at all times to assure reliable operation.

Violation: The water supply lines to the soda carbonation systems were missing pressure-type backflow preventers.
Recommendation: Provide pressure-type backflow preventers on soda carbonators. Vacuum breakers and backflow preventers must be properly installed and maintained in good repair at all times to assure reliable operation.

Violation: Some of the pressure-type backflow preventers for the juice machines, cappuccino machines and other dispensing machines were improperly positioned downstream of the in-line filters.
Recommendation: Install pressure-type backflow preventers upstream of in-line filters for dispensing machines. Vacuum breakers and backflow preventers must be properly installed and maintained in good repair at all times to assure reliable operation.

Violation: Half-gallon cartons of frozen yogurt mix in refrigerator #4811092079 were found with an internal product temperature of 49oF. The yogurt mix was moved to another refrigerator during the inspection.
Recommendation: Potentially hazardous food requiring refrigeration shall be stored at or below 45oF.

Violation: The ambient air temperature inside of reach-in refrigerator #4811092079 was 46oF.
Recommendation: Refrigerators used to store potentially hazardous foods must be maintained at 40oF (4.5oC) at all times to assure that potentially hazardous foods stored therein stabilize at or below 45oF (7oC).

Violation: One stem thermometer was 8oF, one 3oF and one 4oF out of calibration.
Recommendation: Food probe thermometers must be calibrated periodically. All thermometers shall be accurate to +2oF (+1oC).

Violation: The technical cabinet below the dough roller in the Bakery/Pastry was heavily corroded.
Recommendation: Remove the corrosion and re-paint the metal. Seal the cabinet to prevent water from splashing into it.

Violation: Reach-in refrigerator #4811092079 was missing the door gaskets creating a visible opening when the doors were fully closed.
Recommendation: Install door gaskets so that the door seals completely.

Violation: A few of the ice bin door gaskets were split or separated at the corners. A few of the doors were also missing the plugs that seal in the insulation.
Recommendation: Replace damaged door gaskets and missing plugs. Ice bin door gaskets shall be easily cleanable without breaks in the material. The corners shall be closed and sealed and hollow sections shall be sealed.

Site: Other-VIKING CROWN BAR
Violation: The distance from the far end of the service bar to the nearest handwashing sink was 34 feet.
Recommendation: Handwashing stations must be maintained in good repair and located to permit easy use by employees in food preparation areas. No employee shall have to walk a distance of more than 25-feet to reach a station.
