Violation: WE WERE UNABLE TO LOCATE THE BACKFLOW PREVENTER ON THE BED PAN WASHER IN THE HOSPITAL.
Recommendation: Ensure that the potable water supply lines to the bed pan washer are equipped with appropriate backflow preventers.

Recommendation: Discontinue the use of electrocution type insect traps. Insect attracting traps are acceptable but cannot be installed directly over food preparation areas.

Violation: SEVERAL ICE SCOOPS USED TO REPLENISH PASSENGER CABIN ICE BUCKETS WERE NOTED LAYING INSIDE THE LEXAN CONTAINERS FILLED WITH ICE ON THE CABIN STEWARDS CARTS. THE HANDLES OF SEVERAL OF THESE SCOOPS WERE IN DIRECT CONTACT WITH THE ICE.
Recommendation: Ice dispensing utensils shall be stored on a clean surface, on hooks fastened to the interior or exterior of the ice machine, on retractable devices attached to the bulkhead or deckhead, or in the ice with the handle extended out of the ice.

Recommendation: Either shorten the electrical cords of the point of sales machines or elevate them off the counters to make cleaning easier.

Violation: THERE WAS A PIECE OF BAR COUNTER MISSING CREATING A DIFFICULT TO CLEAN AREA ON THE BAR.
Recommendation: Nonfood preparation equipment must be easily cleanable, in good repair, and corrosion-resistant.

Violation: THE FINAL RINSE GAUGE OF THE AUTOMATIC POT WASHER WAS NOT FUNCTIONING.
Recommendation: Dishes and utensils must be cleaned and sanitized utilizing spray-type dishwashing machines. These machines shall be properly installed and maintained in good repair. Machines shall be operated in accordance with manufacturers' instructions, and utensils and equipment placed in the machine shall be exposed to all dishwashing cycles. All automatic detergent dispensers, wetting agent dispensers, and liquid sanitizer injectors shall be properly installed and maintained.

Violation: THE FINAL RINSE ARM OF THE CONVEYOR DISHWASHER WAS NOT PROPERLY INSTALLED TO PROVIDE COMPLETE COVERAGE OF THE CONVEYOR. ALSO SEVERAL FINAL RINSE NOZZLES WERE CLOGGED.
Recommendation: Dishes and utensils must be cleaned and sanitized utilizing spray-type dishwashing machines. These machines shall be properly installed and maintained in good repair. Machines shall be operated in accordance with manufacturers' instructions, and utensils and equipment placed in the machine shall be exposed to all dishwashing cycles. Violation: THE THERMOMETER FOR THE SANITIZE SINK IN THE THREE COMPARTMENT SINK WAS BROKEN.
Recommendation: Machine or water line-mounted, numerically scaled, indicating thermometers, accurate to +3oF (+1.5oC), shall be provided to indicate the temperature of the water in each tank of the machine and the temperature of the final rinse water as it enters the manifold.

Violation: THE THERMOMETER FOR THE SANITIZE SINK OF THE THREE COMPARTMENT SINK WAS OUT OF CALIBRATION BY 8F.
Recommendation: Machine or water line-mounted, numerically scaled, indicating thermometers, accurate to +3oF (+1.5oC), shall be provided to indicate the temperature of the water in each tank of the machine and the temperature of the final rinse water as it enters the manifold.

Violation: THE FINAL RINSE TEMPERATURE OF THE FLIGHT TYPE AUTOMATIC DISHWASHING MACHINE WAS MEASURED AT 146F. THE WASH TEMPERATURE WAS MEASURED AT 174F.
Recommendation: Automatic dishwashing machines utilizing hot water for sanitizing shall operate at a minimum of 165oF (74oC) measured at dish level.

Violation: THE SEAM ON THE BACK PLATE OF THE FOOD SLICER WAS SOILED WITH FOOD RESIDUE.

Violation: THERE WAS NO HANDWASHING SINK LOCATED BEHIND THE BAR. THE ONLY HANDWASHING SINK WAS LOCATED IN THE PANTRY AND THE BARTENDER MUST DUCK UNDER THE BAR COUNTER TO ACCESS THIS PANTRY.
Recommendation: It is required that a handwashing sink be installed and located to permit convenient use by all employees in food preparation and warewashing areas.

Violation: THERE WAS AN OPEN SEAM AT THE JUNCTURE OF THE GRILL AND THE BULKHEAD MAKING THE AREA DIFFICULT TO CLEAN.
Recommendation: Surfaces subject to routine splashes, spillage, or other soiling during normal use shall have easily cleanable surfaces.

Violation: THERE WAS A DIFFICULT TO CLEAN GAP BETWEEN THE DECK AND THE BULKHEAD THAT WAS SOILED WITH DEBRIS.
Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean.

Recommendation: Decks, bulkheads, and deckheads in food preparation, warewashing, and storage areas, including pantries, shall be designed and constructed for easy cleanability, shall be corrosion-resistant, maintained in good repair, and kept clean.

Vessel Sanitation Program
