Site: Other-WHIRLPOOL SPAS
Violation: As an added measure to protect the health and safety of persons using whirlpool spas, it is recommended that vessels implement the Final Recommendations to Minimize Transmission of Legionnaires' Disease from Whirpool Spas on Cruise Ships, dated March 25, 1997. It is recommended that hourly bromine readings be taken for the spas.

Violation: There was a leak in the deckhead. (Food stored below the leak was protected by plastic wrap covering the food).
Recommendation: Water supply lines and fixtures above food areas must be free from leaks and properly installed to prevent leaking of water from deckheads onto food.

Violation: Bulk bags of flour were stored on pallets in the passageway.
Recommendation: Bulk flour shall be stored in dry stores rooms designed for that purpose to protect food from contamination as may occur in passageways where people travel.

Recommendation: Employees shall wear hair restraints while preparing food or serving food from the serving line.

Violation: The interiors of the stack ovens were corroded making them difficult-to-clean.
Recommendation: Food-contact and ice-contact surfaces must be constructed of materials that are nontoxic, smooth, corrosion-resistant, nonabsorbent and durable under conditions of normal use.

Violation: The collar on the deck mixer was sealed on so that it could not be removed.
Recommendation: Remove the sealant so that the collar can be removed for cleaning. The food contact surfaces of mixers and similar equipment shall be easily accessible for cleaning and kept free of encrusted food deposits.

Violation: The pass window was worn and the surface was separating.
Recommendation: Surfaces of equipment not intended for contact with food, but which are exposed to splash or food debris or which otherwise require frequent cleaning, shall be designed and fabricated to be smooth, washable, free of unnecessary ledges, projections, or crevices, and shall be readily accessible for cleaning, and shall be of such material and in such repair as to be easily maintained in a clean and sanitary condition.

Violation: A few waiter trays were chipped and peeling along the edges.

Violation: There were a few previously cleaned plate covers, stainless bowls, food pans and strainers that had small amounts of adhering food residue.
Recommendation: To prevent cross-contamination, pots, pans, utensils and other food contact surfaces of equipment shall be thoroughly washed, rinsed and sanitized after each use and prior to storage. Any items which are found to be soiled after being washed, must be returned to the warewashing area for immediate re-washing.

Recommendation: Clean the interiors of refrigerators where dust may accumulate.

Violation: One food tray on a child's eating chair was slightly soiled.
Recommendation: To prevent cross-contamination, food contact surfaces such as the food tray on children's high chairs shall be thoroughly washed, rinsed and sanitized after each use and prior to storage.

Violation: Clean utensils were arranged haphazardly in racks on the serving line so that employees had difficulty retrieving utensils without touching the food contact surfaces.
Recommendation: Spoons, knives and forks shall be touched only by their handles. Cleaned and sanitized utensils shall be handled and stored in a way that protects them from contamination.

Violation: There was only cold water available at the handwashing sinks at the beginning of the inspection.
Recommendation: Handwashing sinks must be provided hot and cold running water from a single mixing outlet.
