Violation: ACCUMULATION OF MOLD FOUND IN THE CONDENSATE LINE OF A WALK-IN COOLER.
Recommendation: 7.7.4.2.1 Decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, shall be cleaned as often as necessary.

Violation: A PLASTIC CUTTING BOARD WAS SEVERELY SCORED AND DIFFICULT TO CLEAN.
Recommendation: 7.4.5.1.3 Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they no longer can be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.

Violation: INTERNAL TEMPERATURE OF MILK IN BUFFET UNDER COUNTER REACH-IN REFRIGERATOR WAS MEASURED AT 44F. MILK HAD BEEN ON DISPLAY AND RETURNED TO UNIT AFTER BREAKFAST SERVICE WAS COMPLETED. [THE FEW MILK CARTONS IN THE UNIT WERE BLAST CHILLED IMMEDIATELY.]
Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (2) At 5C (41F) or less.

Violation: FOOD SOIL AND OTHER DEBRIS WAS NOTED ON DECK UNDER THE SOILED DISH COUNTER.

Violation: CREW MESS: SOFT SERVE ICE CREAM MACHINE DRIP TRAY DID NOT EXTEND UNDER BOTH REAR BEARINGS OF BARRELS. MAIN GALLEY: SOFT SEALANT WAS LOOSE AND CREATED A DIFFICULT TO CLEAN CONDITION ON THE STEAMER OVEN.
Recommendation: 7.4.5.1.2 Nonfood-contact equipment shall be maintained in good repair and proper adjustment including: (1) Equipment shall be maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Violation: DECKS IN GALLEYS, PANTRIES AND CREW MESS HAD SEVERELY WORN DECK COATING IN MANY AREAS CREATING DIFFICULT TO CLEAN CONDITIONS. [SUBSTANTIAL WORK HAS ALREADY BEEN DONE IN SEVERAL AREAS TO CORRECT THIS LONG-STANDING PROBLEM. WORK IS IN PROGRESS TO COMPLETE THESE REPAIRS.]
