Recommendation: Include a statement in the completed history for the potable water tank maintenance when the tanks are cleaned and super chlorinated.

Violation: BACKFLOW PREVENTERS WERE NOT INSTALLED ON THE CARBONATOR CONNECTED TO THE AFT SODA DISPENSER. FORWARD DISPENSER CARBONATOR HAD PROPER BACKFLOW PREVENTER INSTALLED. CONDITION WAS ALSO NOTED IN DECK 4 AND DECK 5 - MAIN GALLEY - BEVERAGE STATIONS. DECK 3 BEVERAGE STATION CARBONATOR PUMP HAD A LEAK WHICH WAS REPAIRED AT THE TIME OF THE INSPECTION.
Recommendation: Install the appropriate backflow preventers for these locations.

Site: Other-POOLS AND WHIRLPOOL SPAS
Violation: THE WRITTEN FECAL ACCIDENT PROTOCOL WAS INCOMPLETE; THERE WAS NO INFORMATION ON THE PROCEDURE WHEN THE POOLS ARE OPERATED IN SEA-TO-SEA MODE. ADDITIONALLY, THE PROTOCOL DID NOT REQUIRE DRAINING THE POOL IN CASES OF FORMED STOOL AND PROVIDED A SUPER CHLORINATION METHOD TO REPLACE DRAINING OF POOL OR SPA IN SOME CASES.
Recommendation: Modify the existing fecal accident protocol to address methods when the ship's pools are operating in sea-to-sea mode. Specify that in all fecal accident case the pool or spa will be drained, the surfaces washed and chlorinated prior to re-filling. If in port and under recirculation mode, the pool or spa should be closed and the pool/spa drained when the ship is far enough out to sea to allow it.

Violation: THE SAND FILTERS FOR THE WHIRLPOOLS SPAS WERE ON A SCHEDULED REPLACEMENT SYSTEM FOR EVERY 12 MONTHS. THE SYSTEM WAS BEING FOLLOWED, BUT THE VSP MANUAL REQUIRES REPLACEMENT OF THESE FILTERS AT LEAST EVERY 6 MONTHS.
Recommendation: 6.3.1.1.6 The granular filter media shall be replaced at least every 6 months. The filter housing shall be cleaned and sanitized before the new filter media is placed in it.

Violation: THE CURRENT PROTOCOL FOR PREVENTATIVE MEASURES STATES THAT ICE WILL BE PROVIDED UPON A REQUEST TO THE PASSENGERS. THE CURRENT PRACTICE IS THAT ICE IS PROVIDED PRIOR TO ANY REQUEST.
Recommendation: Follow the ship's protocol.

Violation: FOOD COOLING LOGS INDICATED BLAST CHILLERS WERE IN ALMOST EVERY CASE GETTING FOOD ONLY TO 70F IN TWO HOURS. MANAGEMENT SHOULD VERIFY THE ACCURACY OF THE MEASUREMENT AND RECORDING OF THE TEMPERATURES.
Recommendation: 7.2.1.2.1.7 The person in charge of the food operations on the vessel shall ensure that: (7) Employees are using proper methods to rapidly cool potentially hazardous foods that are not held hot or are not for consumption within 4 hours, through daily oversight of the employees' routine monitoring of food temperatures during cooling.

Recommendation: 7.3.5.3.1.1 Potentially hazardous food shall be maintained: (1) At 60C (140F) [roasts 54C (130F)] or above,; or (2) At 5C (41F) or less.

Violation: FIVE FINAL SANITIZING RINSE MANIFOLD NOZZLES IN THE MAIN DISHWASHING MACHINE WERE CLOGGED AND NOT SPRAYING ANY WATER. TEMPERATURE GAUGES WERE 8-10F OUT OF CALIBRATION ON THE MAIN DISHWASHING MACHINE.
Recommendation: Unclog the final rinse nozzles and replace or recalibrate the temperature gauges. 7.5.2.1.1 Water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit shall be designed to be accurate to 1.5C in the intended range of use. (2) That are scaled only in Fahrenheit shall designed to be accurate to 3F in the intended range of use.

Violation: MAXIMUM SANITIZING TEMPERATURE AT PLATE SURFACE IN CONVEYOR DISHWASHING WAS 154F IN MULTIPLE TRIALS. STEAM SYSTEM WAS BEING REPAIRED WHILE DISHWASHERS WERE RUNNING. ALL BREAKFAST DISHES PROCESSED TO POINT OF DISCOVERY WILL BE REWASHED WHEN REPAIRS ARE COMPLETED.
Recommendation: 7.5.6.1.2 In a mechanical operation, the temperature of the fresh hot water sanitizing rinse as it enters the manifold may not be more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F). (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.

Violation: THERE WERE NO INSPECTION TIMES WRITTEN ON THE MONITORING LOG FORMS FROM THE VARIOUS INSPECTIONS CONDUCTED WEEKLY. BEGIN RECORDING THE TIMES FOR THESE INSPECTIONS SO IT IS CLEAR SOME ARE CONDUCTED AT NIGHT.
Recommendation: 8.1.1.1.2 The Integrated Pest Management Plan shall set a schedule for periodic monitoring inspections including some at night.

Violation: APPROXIMATELY 15 AIR CONDITIONING UNITS HAVE NOT BEEN RETROFITTED WITH EASY ACCESS INSPECTION HATCHES FOR THE CONDENSATE COLLECTION PANS AND THE AC FAN COILS.
Recommendation: Make the necessary repair to the various air conditioning units so there is a way to easily access the condensate drain pan and the fan coil for inspection/maintenance.
