Violation: A SANITIZING TEMPERATURE SIGN OF 171 SHOULD BE PROVIDED OVER THE POTWASH AREA.

Violation: A EMPLOYEE WAS NOTICED COUGHING AT LEAST FOUR TIMES AND THEN HANDLING THE NON-FOOD CONTACT SURFACE OF SEVERAL COFFEE CUPS.
Recommendation: Employees should wash their hands after coughing and before they handle items which involve food service.

Violation: FOUR CASES OF CANNED PEACHES WERE STORED IN BOXES THAT WERE SOILED WITH JUICE FROM THE CANS AND WERE HEAVILY COVERED WITH MOLD. THE CANS WERE DISCARDED IMMEDIATELY.
Recommendation: 7.3.2.2.5 Food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Canned goods with dents on end or side seams may not be used.

Violation: SEVERAL CASES OF CANNED SODAS WERE STORED ON THE DECK.
Recommendation: 7.3.3.5.1 Food shall be protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE UTILITY LOADING DISHES INTO THE FLIGHT TYPE DISHWASHER WAS OBSERVED THROWING DISHES ONTO THE CONVEYOR, THIS CAUSED THE DISHES TO BE IMPROPERLY SPACED AND NOT BEING PROPERLY CLEANED AND SANITIZED.
Recommendation: Follow the manufacturer's recommendations for properly loading dishware to ensure dishware is properly cleaned and sanitized.

Violation: MANY OF THE DISHES BEING LOADED INTO THE DISHWASHING MACHINE WERE NOT PRE-FLUSHED BEFORE LOADING. THIS RESULTED IN A LARGE ACCUMULATION OF FOOD DEBRIS AND TRASH ON THE CLEAN END OF THE DISHWASHING MACHINE.
Recommendation: 7.5.5.3.1 Food debris on equipment and utensils, shall be scrapped over a waste disposal unit, pulper, or garbage receptacle or shall be removed in a warewashing machine with a prewash cycle.

Violation: THE FAN AND FAN GUARD WAS FOUND SOILED WITH DUST AND MOLD.
Recommendation: 7.5.5.1.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Recommend increasing the cleaning frequency of this unit.

Recommendation: Ensure that the ice scoop handle can not come into direct contact with the ice in the bin.

Recommendation: Store the ice scoop on the hook inside the ice machine to prevent the contamination of the ice.

Violation: THE LIDO DISHWASHING HAD HEAVY CONDENSATION DRIPPING FROM THE DECKHEAD. THE SAME CONDITION WAS NOTED ON THE PREVIOUS INSPECTION.
Recommendation: 7.4.2.4.1 Exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.

Violation: A FULLY DEVELOPED, WRITTEN INTEGRATED PEST MANAGEMENT PLAN WAS NOT AVIALABLE DURING THE INSPECTION.
Recommendation: 8.1.1.1.2 The Integrated Pest Management Plan shall set a schedule for periodic monitoring inspections including some at night. 8.1.1.1.3 The Integrated Pest Management Plan shall include provisions for active monitoring including pest sighting logs for the operational areas of the vessel and training for crew members in charge of log completion. 8.1.2.1.3 The training of the pest-control personnel shall be documented in the Integrated Pest Management Plan. 8.1.2.1.4 The Integrated Pest Management Plan shall establish health and safety procedures to protect the passengers and crew. 8.2.1.1.3 Incoming shipments of food and supplies shall be routinely inspected for evidence of insects, rodents, and other pests.
