Violation: THE MANAGEMENT AND RECORDKEEPING IN THE HOUSEKEEPING, PEST MANAGEMENT, POTABLE WATER, AND MEDICAL DEPARTMENTS WERE EXCELLENT TODAY. MANAGEMENT AND OPERATION OF THE BARS WAS ALSO VERY GOOD.

Recommendation: Charts should be noted at all times when calibrations and tests are conducted.

Violation: THERE WAS NO RECORD OF DAILY CALIBRATION OR CALIBRATION TESTS MADE FOR THE WHIRLPOOL SPA HALOGEN ANALYZER/RECORDERS.
Recommendation: Daily records of calibrations and tests shall be maintained for whirlpool spas and halogen analyzer recorders.

Site: Other-WATERFALL CAF - FRESH FRUIT BUFFET
Violation: UNPEELED APPLES, ORANGES, BANANA, AND OTHER FRUIT REMAINING ON THE BUFFET LINE AFTER MORNING SERVICE WERE SAID TO BE REMOVED AND TAKEN DOWN TO THE PREPARATION ROOM WHERE THEY WOULD BE CLEANED PRIOR TO RETURN TO THE SERVICE LINE FOR LUNCH.
Recommendation: This practice should be discontinued due to the potential that all of the fruit may not be rewashed before being presented on the service line again. Putting less fruit on the service line and refilling it when necessary would address this issue.

Site: Other-WATERFALL CAF - GENERAL
Violation: THERE WAS A DEGREE OF CONFUSION ON THE PART OF THE NEWER STAFF REGARDING THE POLICY TO FOLLOW ON TIME OR TEMPERATURE CONTROL OF BACTERIAL GROWTH IN POTENTIALLY HAZARDOUS FOODS ON THE BUFFET LINE. THERE WAS A GENERIC WRITTEN SAMPLE PLAN FOR HOT FOODS, BUT NO WRITTEN PLAN FOR COLD FOODS. A NEW PLAN FOR EACH SERVICE AREA WAS CREATED AND REVIEWED FOR CONTENT DURING THE INSPECTION. ENSURE THE PLANS ARE POSTED IN EACH AREA AND NEW STAFF ARE TRAINED ON THE TIME CONTROL PLANS.
Recommendation: Ensure that the time control plans are posted in each area and the new staff are trained on the time control plan.

Violation: A CUTTING BOARD WAS HEAVILY SCRATCHED AND PITTED.

Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: A FEW OF THE PREVIOUSLY CLEANED CUTTING BOARDS HAD HEAVILY CUT SURFACES, WHERE RAISED PLASTIC PARTICLES WERE PRESENT AND THE TEXTURE WAS ROUGH TO THE TOUCH. ONE SUCH BOARD WAS WARPED AND HAD NO FLAT SURFACES LEFT.
Recommendation: 7.4.5.1.1.2 Food-contact equipment shall be maintained in good repair and proper adjustment including: (2) Cutting or piercing parts of can openers shall be kept sharp to minimize the creation of metal fragments that can contaminate food when the container is opened.

Violation: A SOFT SEALANT APPLIED TO THE BACK PLATE OF THE MEAT SLICER BLADE WAS PEELING AWAY.

Violation: A DATA PLATE WAS NOT PROVIDED DESCRIBING THE CONVEYOR SPEED OF THE MACHINE.
Recommendation: 7.5.2.2.3 A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Violation: THE IN-USE GLASSWASH MACHINE HAD A FINAL, HOT WATER SANITIZING TEMPERATURE OF 190 F AT THE DISH SURFACE, BUT THE MOUNTED THERMOMETER REGISTERED OVER 220 F, WHICH IS AT LEAST 10 F OUT OF CALIBRATION.
Recommendation: 7.5.2.2.2 Water temperature measuring devices on warewashing machines shall have a numerical scale, printed record, or digital readout in increments no greater than 1C (2F) in the intended range of use.

Violation: THE IN-USE, HOT WATER FINAL SANITIZING SINK HAD A WATER TEMPERATURE OF 200 F.
Recommendation: 7.5.4.1.1 Warewashing equipment shall be maintained in good repair and proper adjustment including: (1) Warewashing equipment shall be maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines. (2) Water pressure, and water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use.

Recommendation: 7.5.5.1.4 Equipment food-contact surfaces and utensils shall be cleaned: (1) Before each use with a different type of raw animal food such as beef, fish, lamb, pork, or poultry; (2) Each time there is a change from working with raw foods to working with ready-to-eat foods; (3) Between uses with raw fruits and vegetables and with potentially hazardous food; (4) Before using or storing a food temperature measuring device; and (5) At any time during the operation when contamination might have occurred.

Violation: THERE WAS NO HANDWASH STATION AT THE GRILL FRONT AND THE HANDWASH STATION IN THE PANTRY REQUIRED PASSAGE THROUGH A NORMALLY CLOSED DOOR.
Recommendation: A handwash sink should be placed in the grill area or the door separating the two areas should be a swinging door that does not require usage of the hands to open the door.

Violation: THE DECKHEAD OVER THE FRONT GRILL AREA WAS SOILED FROM THE OIL RESIDUE PRODUCED ALONG THE HOT SECTIONS OF THE FRONT COUNTER. IN ADDITION, THE EXHAUST VENT COVERS OVER THE FRONT COUNTER WERE SOILED WITH DUST DEBRIS.
Recommendation: 7.7.4.2.1 Decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, shall be cleaned as often as necessary.

Violation: THERE WERE OPEN HOLES IN THE DOOR FRAME TO THE PANTRY. THERE WERE ALSO GAPS ALONG THE DOOR FRAME ALONG WHERE THE LOCKING PINS ENTER. PLASTIC CAPS SHOULD BE INSTALLED ON THE DOOR FRAME HOLES AND INVERTED NIPPLE RECESS WHERE THE LOCKING PIN ENTERS.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.

Recommendation: 7.4.2.4.1 Exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.

Violation: THERE WAS NO SIGN POSTED IN THE CHILDREN'S TOILET ADVISING PROVIDERS TO WASH THEIR HANDS AND THE CHILDREN'S HANDS AFTER ASSISTING CHILDREN USE THE TOILET.
Recommendation: 10.2.1.1.5 Signs shall be posted in children's toilet room advising the providers to wash their hands and the children's hands after assisting children use the toilet.
