Violation: THE ENGINEERING STAFF WAS VERY KNOWLEDGEABLE AND THE RECORD KEEPING WAS EXCELLENT TODAY. VARIOUS DEPARTMENTS SHOWED OVERALL GOOD MANAGEMENT AND KNOWLEDGE OF THEIR PROGRAMS.

Violation: NUMEROUS BOXES TO ALCOHOL AND SEVERAL BOXES OF BAR SNACKS WERE NOTED SITTING DIRECTLY ON THE DECK.
Recommendation: Ensure that all food including alcohol bottles and boxes are stored off of the deck.

Violation: THE BACK PART OF BEVERAGE LINE COUNTER TOP WAS NOT EASILY ACCESSIBLE FOR CLEANING DUE TO THE WAY THE EQUIPMENT IS MOUNTED.
Recommendation: Develop a method to clean the back part of the beverage line counter top and ensure that it is included on the cleaning schedule.

Violation: THE SEALANT IN THE SEAM OF THE COUNTER TOP HAD BEGUN TO SEPARATE CREATING A DIFFICULT TO CLEAN OPENING.
Recommendation: Remove the old sealant, thoroughly clean the area, and reseal the seam with a food grade sealant.

Violation: LOOSE PEELING SEALANT WAS NOTED IN SEAMS OF THE VENTILATION HOODS.
Recommendation: 7.4.2.1.2 Nonfood-contact surfaces of equipment and utensils shall be designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Recommendation: 7.5.5.1.3 Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: THE DOOR LATCH RECESS WAS AN OPEN CHANNEL. THE REQUIRED INVERTED NIPPLE WAS NOT IN PLACE TO PREVENT HARBORAGE OF INSECTS.
Recommendation: Fill the recess channel with an inverted nipple to prevent harborage of insects.
