Violation: THE CURRENT CHART IS NOT ACCURATE FOR THE PRODUCTION/BUNKER HALOGEN ANALYZER/CHART RECORDER. THE SCALE IS SET FOR 0-10 WHILE THE CHART IS FOR 0-5.
Recommendation: Choose either 0-5 or 0-10 for a scale and ensure the charts are reflective of the true calibration of the analyzer.

Violation: THE HALOGEN LEVEL FOR THE POOL TESTED 5.0 PPM. THERE WERE NO SWIMMERS IN THE POOL AT THE TIME.
Recommendation: 6.2.2.1.1 A free residual halogen of >1.0 and <3.0 mg/L (ppm) shall be maintained in recirculated swimming pools.

Violation: THE HALOGEN LEVEL FOR THE SPAS TESTED 2.74 AND 2.45 PPM. THERE WERE NO BATHERS AT THE TIME.
Recommendation: 6.3.2.1.1 Whirlpool spas shall maintain a free residual chlorine of >3.0 mg/L (ppm) and <10 mg/L (ppm), or a free residual bromine of >4.0 mg/L (ppm) and <10 mg/L (ppm).

Recommendation: 7.4.1.1.2 Materials that are used in the construction of multiuse utensils and food-contact surfaces of equipment shall be: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: THERE WERE NO AMBIENT TEMPERATURE MEASURING DEVICES IN THE HALO HEAT UNITS.
Recommendation: 7.4.2.4.9.1 Temperature measuring devices shall conform to the following guidelines: (1) In a mechanically refrigerated or hot-food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot-food storage unit.

Violation: DATA PLATES LISTING THE PRESSURE REQUIRED FOR THE SANITIZING RINSE AND CYCLE TIME WERE MISSING ON THE TWO LARGE POTWASHING MACHINES IN THE POTWASH AREA.
Recommendation: 7.5.2.2.3 A warewashing machine shall be provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Violation: THE GAUGES ON THE POTWASH WERE NOT ACCURATE WITH THE ACTUAL TEMPERATURE INSIDE THE MACHINE.
Recommendation: 7.5.2.1.1 Water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit shall be designed to be accurate to 1.5C in the intended range of use. (2) That are scaled only in Fahrenheit shall designed to be accurate to 3F in the intended range of use.

Violation: THE HOBART MIXER COLLARS ON ALL OF THE HOBART MIXERS LOCATED THROUGHOUT THE FOOD SERVICE AREAS WERE SEALED SO THEY COULD NOT BE REMOVED REGULARLY. IT WAS STATED BY THE ENGINEERING STAFF THAT THESE COLLARS ARE REMOVED EVERY TWO MONTHS FOR MAINTENANCE. THE COLLAR ON THE MIXER IN THE CREW GALLEY WAS REMOVED AND WAS HEAVILY SOILED. THESE COLLARS SHOULD NOT BE SEALED SO THAT THEY CAN BE REMOVED AND CLEANED ON A REGULAR BASIS.
Recommendation: 7.5.5.1.1 Food-contact surfaces of equipment and utensils shall be clean to sight and touch. Implement a cleaning schedule for these areas of the mixers.
