Violation: THERE WERE A FEW DAYS WHEN THE PH AND THE CHLORINE VALUES WERE NOT DOCUMENTED WHILE BUNKERING WATER.
Recommendation: Ensure the chlorine and ph values are properly documented when bunkering.

Violation: THERE WERE NO AMBIENT THERMOMETERS LOCATED IN THE HALO HEAT UNITS.
Recommendation: 7.4.2.4.9.1 Temperature measuring devices shall conform to the following guidelines: (1) In a mechanically refrigerated or hot-food storage unit, the sensor of a temperature measuring device shall be located to measure the air temperature in the warmest part of a mechanically refrigerated unit and in the coolest part of a hot-food storage unit.

Violation: THE FRONT PLATES ON THE FRYING UNITS HAD AN OPEN SEAM IN THE CENTER WHICH MADE CLEANING DIFFICULT.
Recommendation: 7.4.2.2.6 Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: CRACKED AND BROKEN TILES WERE NOTED THROUGHOUT THE FOOD SERVICE AREA.
Recommendation: 7.7.4.1.1 Decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas shall be constructed and maintained for easy cleaning.

Violation: THERE WERE OPEN HOLES NOTED IN THE DOOR FRAMES WHERE THE LOCKING PIN PENETRATES THE DOOR FRAMES.
Recommendation: The open holes should be sealed to prevent insect harborage and to make the surface easily cleanable.

Violation: THE INFRARED LIGHTS EXTENDED BEYOND THE METAL SHIELDING AND IT COULD NOT BE CONFIRMED IF THESE LIGHTS WERE SHATTER-RESISTANT.
Recommendation: 7.7.5.2.2 An infrared or other heat lamp shall be protected against breakage by a shield surrounding and extending beyond the bulb so that only the face of the bulb is exposed. 7.7.5.2.1 Light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food; clean equipment, utensils, and linens; or unwrapped single-service, and single-use articles.

Violation: CONDENSATE WAS NOTED ON THE DECKHEAD ABOVE THE DIRTY END OF THE WAREWASHER.
Recommendation: 7.4.2.4.1 Exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting shall be designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.

Violation: CONDENSATE WAS NOTED OVER THE DIRTY END OF THE FLIGHT TYPE WAREWASH MACHINE AND THE AREA WAS VERY HOT AND HUMID.
Recommendation: 7.7.6.1.1 All food preparation, warewashing, and toilet rooms shall have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes.

Violation: THERE WAS NO SIGN POSTED IN THE CHILDREN'S TOILET ADVISING PROVIDERS TO WASH THEIR HAND AND THE CHILDREN'S HANDS AFTER ASSISTING CHILDREN USING THE TOILET.
Recommendation: 10.2.1.1.5 Signs shall be posted in children's toilet room advising the providers to wash their hands and the children's hands after assisting children use the toilet.
