Violation: THE TEMPERATURES OF TWO TRAYS OF CUT MELON STORED IN UNDER-COUNTER REFRIGERATOR # 81 AND PREPARED AT 1:00 AM WERE MEASURED AT 44F AND 45F, RESPECTIVELY. THESE WERE DISCARDED IMMEDIATELY. COMMON PRACTICE WOULD BE TO CHILL THESE IN A BLAST CHILLER. HOWEVER THE TWO BLAST CHILLERS IN THE MAIN GALLEY WERE OUT OF ORDER.
Recommendation: Ensure that potentially hazardous food is maintained: (1) At 60C (140F) [roasts 54C (130F)] or above; or (2) At 5C (41F) or less.

THE TWO TRAYS OF CUT MELON, WITH INTERNAL TEMPERATURES OF 44 AND 45 DEGREES F RESPECTIVELY, WERE STORED IN THIS REFRIGERATOR. A BLAST CHILLER WAS NOT AVAILABLE IN THE MAIN GALLEY TO COOL THE CUT MELONS TO 41 DEGREES F OR BELOW.
Recommendation: Ensure that potentially hazardous food is held under refrigeration that maintains the food temperature at 5C (41F) or less.

Violation: THE DISHWASH MACHINE DID NOT HAVE A DATA PLATE SPECIFYING THE MANUFACTURER'S OPERATING TEMPERATURES, PRESSURE AND CONVEYOR SPEED. THE FINAL RINSE SPRAY PATTERN ON THE DISHWASH UNIT DID NOT COMPLETELY COVER THE CONVEYOR.
Recommendation: Ensure that warewashing machines are provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines. Ensure that warewashing equipment is maintained in good repair and proper adjustment.
