Violation: IN DEVELOPING THE CORRECTIVE ACTION STATEMENT FOR THIS INSPECTION, CRITICAL-ITEM DEFICIENCIES (DESIGNATED WITH YES IN CRITICAL COLUMN (WORTH 3 - 5 POINTS), WHETHER DEBITED OR NOT, SHOULD INCLUDE STANDARD OPERATING PROCEDURES AND MONITORING PROCEDURES IMPLEMENTED TO PREVENT THE RECURRENCE OF THE CRITICAL DEFICIENCY. Violation: TWO HOSES WERE CONNECTED TO THE WATER SYSTEM NEAR THE HANDWASHING SINK WITHOUT BACKFLOW PREVENTERS. VERIFY THAT THIS PARTICULAR WATER SUPPLY IS POTABLE OR TECHNICAL WATER.
Recommendation: If the water supplied to the handsink is potable, ensure that backflow preventers are installed when air gaps are impractical or when water under pressure is required.

Violation: HEAVY CONDENSATE WAS NOTED ON THE DECKHEAD OF ONE FREEZER. DRIPPING CONDENSATE HAD DAMAGED SEVERAL OUTER FOOD CARTONS. 1/8" OF FROZEN CONDENSATE WAS NOTED IN A PLASTIC BIN OF FROZEN FOODS. THIS WAS DISCARDED DURING THE INSPECTION.
Recommendation: Ensure that food is protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: AN ICE SCOOP WAS STORED IN THE ICE MACHINE WITH THE HANDLE IN DIRECT CONTACT WITH THE ICE.
Recommendation: Ensure that the handles of ice scoops do not come in direct contact with the ice.

Recommendation: Ensure that during pauses in food preparation or dispensing, food preparation and dispensing utensils are stored: (3) On a clean portion of the equipment only if the in-use utensil and the food-contact surface of the equipment are frequently cleaned and sanitized.

Violation: THE HARD SEALANT ON THE BACKPLATE OF THE MEAT SLICER WAS MISSING IN SOME AREAS, LEAVING GAPS AND DIFFICULT TO CLEAN SURFACES.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition.

Violation: A SEAM BETWEEN THE HOUSING AND THE PLASTIC PROFILE STRIP IN FRONT OF THE BULK MILK DISPENSER WAS NOT TIGHT, ALLOWING WATER AND OLD MILK RESIDUE TO SEEP BEHIND THE PROFILE STRIP.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: VERIFY THE ACCURACY OF THE THERMOMETERS ON THE DISHWASHING MACHINES. A TEN DEGREE DIFFERENCE WAS NOTED BETWEEN ONE THERMOMETER AND THE ACTUAL WATER TEMPERATURE.
Recommendation: Ensure that water temperature measuring devices: (1) That are scaled in Celsius or dually scaled in Celsius and Fahrenheit are accurate to ±1.5°C in the intended range of use. (2) That are scaled only in Fahrenheit are accurate to ±3°F in the intended range of use.

Recommendation: Ensure that cleaned equipment and utensils, laundered linens, and single-service and single-use articles are stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: THE SEAL ALONG THE BOTTOM OF THE DOOR OF THE WALK-IN REFRIGERATORS IN THE CENTER LIDO GALLEY, THE LIDO PANTRY ONE, AND THE CASINO BAR PANTRY WAS CRACKED AND HEAVILY SOILED WITH MILDEW. THE MILDEW WAS ALSO SOILING THE DECK IN FRONT OF THE WALK-IN DOORS.
Recommendation: Ensure that surfaces subject to routine splashes, spillage or other soiling during normal use have easily cleanable features. Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: THE LIGHTING IN THIS AREA WAS INSUFFICIENT. SPOTLIGHTS WERE THE ONLY LIGHTING PROVIDED IN THIS AREA.
Recommendation: Ensure that the light intensity is at least 220 Lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.
