Site: Potable Water-Cross-connection Control Program
Violation: A high pressure wash system was used to clean the interior of the sewage treatment tanks and potable water was used in this system.
Recommendation: Ensure that the potable water system is protected against backflow or other contamination by backflow preventers or air gaps. Ensure that an air gap is used when there is a cross-connection with the sewage system. Use technical water for this high pressure wash system.

Site: Potable Water-Cross-connection Control Program
Violation: The list of backflow prevention device/methods did not include the air gaps on the drains of the mineralizer tanks. This was corrected at the time of the inspection.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Potable Water-Cross-connection Control Program
Violation: There was an atmospheric vacuum breaker backflow preventer on the deck 1 hose connection. Per staff, there is a valve at the end of the hose used at this location. This was corrected at the time of the inspection. Additionally, the device listing was for a double check valve with an intermediate atmospheric vent.
Recommendation: Ensure that a continuous pressure-type backflow preventer is installed when a valve is located downstream from the backflow preventer. Ensure that the device installed matches the device listed on the cross-connection control program.

Site: Preparation Room-
Violation: There was soft sealant around the chute of the potato peeler.
Recommendation: Ensure that materials used in the construction of multiuse utensils and food-contact surfaces of equipment are: (1) Durable, corrosion-resistant, and nonabsorbent; (2) Sufficient in weight and thickness to withstand repeated warewashing; (3) Finished to have a smooth, easily cleanable surface; and (4) Resistant to pitting, chipping, crazing, scratching, scoring, distortion, and decomposition. Remove the soft sealant and replace with a hard sealant approved for use in food contact surfaces or replace the rubber gasket.

Violation: The sealant in the back of the tilting pan turning handles was sticky. The back of the right handle was soiled with food debris.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: There was mold on the refrigerant line insulation and on the bottom of the of the drain in the technical space below the speed rail. This was corrected at the time of the inspection.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: There was recessed grout in the deck below the Zumex juicer.

Site: Galley-Deck 5 & 6 Cold Rooms
Violation: There were a few cold rooms where the recess in the door frame for the door latch was not sealed and opened into the door frame void. This was noted cold rooms 6609, 6618, 5626, and 5620.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning. Install a solid latching pin recess in the door frame similar to the other cold rooms on the ship.

Violation: In the provision rooms where there was a long bulkhead at the entrance to the room, the coving was separating from the bulkhead in a few places along the bulkhead.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: There was a leak at the flexible pipe for the undercounter dishwash unit.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.
