Site: Potable Water-Storage Tanks
Violation: It was not clear from the records that the manufacturer's recommendations for drying, curing and applying the tank coating were followed.
Recommendation: Ensure that interior coatings on potable water tanks are approved for potable water contact, and all manufacturer's recommendations for application, drying, or curing are followed. Ensure written documentation for the coating used and recommendations followed are available for review during inspections.

Violation: The drain cover for whirlpool 2 was damaged. The whirlpool was filled, but not in use at the time of the inspection.
Recommendation: Replace the drain cover.

Violation: It was not clear from the records for the private hot tubs when the super halogenation occurred.
Recommendation: Ensure that private whirlpool spas located in individual passenger cabins are cleaned and disinfected, including associated recirculation systems, between occupancies or weekly, whichever is more frequent.

Violation: The variance for the Garden Villa whirlpool/spas stated that the Staff Captain would review and sign the logs on a weekly basis. The Chief Officer was the only one reviewing the records and not the Staff Captain.
Recommendation: Ensure the Staff Captain reviews and signs the logs according to the variance.

Site: Buffet-Crew Mess
Violation: There was a discard label on the milk container inside the WMF machine. The discard time was 10:30 am. At 11:00 am, the milk was still inside the WMF machine. The milk was discarded. Per staff, the previous discard label was placed on a new container of milk inside the unit.
Recommendation: Ensure potentially hazardous foods are discarded within 4 hours of being placed on time control. Also, ensure correct discard labels are placed on the foods.

Violation: The wire mesh on the square basket for the fryer was broken. This was corrected.
Recommendation: Repair or replace the square basket.

Violation: There were slotted fasteners inside all the combination ovens.
Recommendation: Replace the slotted fasteners with smooth, low-profile, non-corroding fasteners.

Violation: There were openings around the chutes of the drip pan housings at the grills.
Recommendation: Ensure that nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Violation: The warewash machines inside the lido, main and crew galleys were installed with an "Opti-Rinse" system. It was difficult to see the final rinse spray pattern on these machines. The staff was unable to test the "Opti-Rinse" system.
Recommendation: Ensure staff members are knowledgeable in operating the "Opti-Rinse" system.

Violation: There was recessed deck grout and cracked deck tiles at the scupper in front of the left two square tilting kettles.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: There was soft sealant along the coving behind the buffet stations.

Violation: There was a missing light cover over the bread station on the starboard side of the buffet. This was corrected.
Recommendation: Ensure that light bulbs are shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, and linens, or unwrapped single-service and single-use articles.

Site: Galley-Potwash
Violation: There was an excessive amount of condensate collecting on the deckhead above the soiled end of the dishwash machine. The condensate was dripping onto the dishwash machine.
Recommendation: Ensure that ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.

Violation: There was a filter unit inside the technical compartment under the beverage station that was no longer in use.
Recommendation: Ensure that only articles necessary for the food service operation are stored in food preparation, food storage, and warewashing areas.
