Site: Potable Water-Pool Machinery Room 8.5.01
Violation: The pipes after the reduced pressure assembly were striped to indicate potable water.
Recommendation: Ensure that piping after backflow prevention devices are not striped to indicate potable water.

Site: Potable Water-Cross-Connection Control Program
Violation: For some of the backflow prevention devices on the cross-connection control program, the locations of the plumbing connections where the devices were installed were not included. For example, for some of the deck 7 cabins only the quantities and device types were on the list. The plumbing connections (toilet or shower) were not included.
Recommendation: Ensure that the cross-connection control program includes at minimum: a complete listing of cross-connections and the backflow prevention method/device for each, so that there is a match to the plumbing system component and location, and an inspection frequency. Ensure that air-gaps are included in the listing.

Site: Galley-Deck 2 - Hot Galley
Violation: A cook was observed coming from the soiled end of the pot wash with a large hotel pan of uncovered fried rice. The potwash was in use. When asked, the cook stated that he had just prepared the rice and removed it from the tilting kettle, which was near the clean end of the potwash area. He stated that there was no room to pass through the row of tilting pans because another cook was stirring food, so he used the potwash as a shortcut.
Recommendation: Ensure that food is not exposed to contamination from soiled areas.

Site: Provisions-Various Freezer
Violation: A long-handled squeegee was stored on top of a box of food.
Recommendation: Ensure that food is protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Site: Buffet-Lido Waffle Station
Violation: The pancakes cooking on the counter top griddle were not under a sneeze shield or otherwise protected. Although the pancakes were not self-service, consumers were standing within one meter of them. Staff stated that the griddle could be moved to the back counter of the buffet line.
Recommendation: Ensure that food within one meter of where consumers stand is protected.

Site: Buffet-Lido Port Omelet Station
Violation: There were no serving utensils for two trays of bread.
Recommendation: Ensure that food-dispensing utensils are available for each container displayed at a consumer self-service unit such as a buffet or salad bar.

Site: Buffet-Lido Port and Starboard Omelet Stations
Violation: Several wicker baskets were used to store bread and bagels for toasting. There were plastic liners in each of the baskets, but they did not completely cover the interior of the baskets. This was noted on the previous inspection. Bread and bagels were in direct contact with the wicker and the braided leather handles. In addition, bread in two of the baskets on the port omelet station were in direct contact with electrical cords.
Recommendation: Ensure that food is protected from contamination by storing the food: (1) In a clean, dry location; (2) Where it is not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.

Violation: Two bowls of apples out for self-service were not under a sneeze shield or otherwise protected. In addition, there were no serving utensils for the apples.
Recommendation: Ensure that food on display is protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means. Ensure that food-dispensing utensils are available for each container displayed at a consumer self-service unit such as a buffet or salad bar.

Violation: A box with shaving cream canisters was stored on the same shelf as bottled liquor. This was corrected.
Recommendation: Ensure that poisonous or toxic materials used in food area cleaning and maintenance are stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles by separating the poisonous or toxic materials by storing in a cleaning materials locker.

Site: Bar-Explorations Cafe
Violation: Two containers of cleaning tablets for the coffee machines were stored on the back counter next to one of the machines. They were immediately moved to the cleaning locker in the pantry.
Recommendation: Ensure that poisonous or toxic materials used in food area cleaning and maintenance are stored so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles by separating the poisonous or toxic materials by storing in a cleaning materials locker.

Recommendation: Ensure that maintenance tools such as mops, brooms, and similar items are stored in a designated locker so they do not contaminate food, food-contact surfaces of utensils, and equipment, linens, and single-service and single-use articles.

Violation: The left tilting pan had been out of service for approximately 4 months. According to staff, spare parts had been ordered and were expected to arrive soon.
Recommendation: Remove, repair, or replace the tilting pan.

Site: Integrated Pest Management-
Violation: The loading inspection forms stated "food and beverage items loaded today have been inspected for signs of pest infestation." There was no indication that plants, flowers, and other non-food items were inspected prior to loading.
Recommendation: Ensure that incoming shipments of food and supplies are routinely inspected for evidence of insects, rodents, and other pests. A record of these inspections shall be maintained onboard the vessel and shall be available for review during inspections.
