Site: Dining Room-Petty Officer's Mess
Violation: The backflow prevention assembly for the combination juice dispenser was continually weeping.
Recommendation: Ensure that backflow preventers are maintained in good repair.

Violation: Two of the three atmospheric vacuum breakers on the salad washer were corroded.
Recommendation: Ensure that backflow preventers are maintained in good repair.

Site: Potable Water-Midship Pool Machinery Room
Violation: The air-gap below the reduced pressure assembly above the entrance door was not twice the diameter of the supply line.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).

Site: Dining Room-Petty Officer's Mess
Violation: Four bundled stainless steel tubes that made up the dispensing nozzle of the juice dispenser had a gap in the center of the bundle that was not easy to clean.
Recommendation: Place food grade sealant in the center of the bundle.

Site: Galley-Deck 2 - Main Preparation Area
Violation: Paper towels were used to hold the oven door closed.
Recommendation: Ensure that nonfood-contact equipment components such as doors, seals, hinges, fasteners, and kick plates are kept intact, tight, and adjusted in accordance with manufacturer's specifications.

Site: Galley-Deck 2 and 3 - Beverage Stations
Violation: The potable water delivery lines and electrical cords from the new coffee machines were draped across the counter top, making cleaning difficult. Staff stated the utility lines will be installed by the end of the month.
Recommendation: Remove the water lines and electrical cords from the counter top.

Site: Galley-Deck 3 - Warewash
Violation: The flight-type warewash machine had several missing and broken finger links.
Recommendation: Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.

Violation: Three of the four final rinse nozzles had an irregular spray pattern.
Recommendation: Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.

Violation: The exhaust hood above the clamshell grill had peeling sealant along the back panel creating a difficult to clean surface.
Recommendation: Replace the sealant, or if the equipment can be disassembled, remove the sealant.

Violation: The inside of the light cover above the conveyer-type oven was soiled.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Site: Food Service General-Pinnacle Grill and Deck 2 and 3 - Main Galley Hot Line
Violation: Light covers that seated against the deckhead had several gaps that created a difficult to clean surface. Some fasteners were missing from the light covers.
Recommendation: Ensure that light covers are seated correctly.

Site: Dining Room-Lido - Clean Linens/Utensils - Rm. 09.04.05A
Violation: The clean utensils and linen store room had exposed lagging along the bulkhead and deckhead, and exposed pipes along the deckhead. The exposed lagging was not hard or durable and was a difficult to clean surface.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: The faucet above the far left tilting kettle was leaking. No food items were impacted.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.

Site: Other-Broken and Out-Of-Service Equipment
Violation: There were numerous pieces of food prepration equipment, including refrigerators, baine's marie, and stacked ovens that were broken or posted out-of-service. These items were observed in all galley and preparation areas and storage areas. All out-of-service equipment had posted work-orders.
Recommendation: Ensure that only articles necessary for the food service operation are stored in food preparation, food storage, and warewashing areas.
