Item No.: 10
Site: DO NOT USE (whirlpool/spa)-Super Chlorination (Shock Halogenation)
Violation: All of the spa chart records were stamped "spa closed from 2200 to 0600 for daily shocking and sanitising." Since the last inspection, many chart records did not indicate that shock halogenation of at least 10 ppm for one hour occurred. The manual records only indicated the date which the shock halogenation occurred for each spa.
Recommendation: Ensure that a written or electronic record of whirlpool spa filter inspection, backwashing, core sample sedimentation test, and shock halogenation (concentration and contact time) is maintained and available for review during inspections.

Site: Galley-Orangery
Violation: A pan of ready-to-eat grapes and apples was stored uncovered in the walk-in refrigerator.
Recommendation: Ensure pans of food in the walk-in refrigerators are covered.

Site: Galley-Cold Larder
Violation: The upright blast chiller CL 34 had been out of order for approximately two months. According to the staff, parts were expected to arrive at the end of the cruise. There were three other upright blast chillers and a walk-in blast chiller available for use in the main galley.
Recommendation: Ensure that food contact equipment is maintained in a state of repair and condition that meets the materials, design, construction, and operation specifications of these guidelines.

Site: Galley-Medina Dishwash
Violation: The glasswash machine had been out of order since 20 December 2010. According to the staff, parts had been ordered.
Recommendation: Ensure that warewashing equipment is maintained in good repair and proper adjustment including: (1) Being maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; and (2) Maintaining water pressure, and water temperature measuring devices in good repair and ensuring their accuracy within the intended range of use.

Site: Pantry-Crystal and Sidewalk Cafe
Violation: There was no data plate on the glasswash machine.
Recommendation: Ensure that warewashing machines are provided with an easily accessible and readable data plate affixed to the machine by the manufacturer that indicates the machine's design and operating specifications including the: (1) Temperatures required for washing, rinsing, and sanitizing; (2) Pressure required for the fresh water sanitizing rinse; and (3) Conveyor speed for conveyor machines or cycle time for stationary rack machines.

Site: Galley-Hot Galley
Violation: There was missing and recessed grout between some of the deck tiles in this area.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas, are maintained in good repair.

Site: Galley-Dishwash (Plate House)
Violation: There was condensate collecting in the exhaust hood above the soiled end of the warewash machine. Condensate was dripping onto the machine. The exhaust ventilation did not appear to be working.
Recommendation: Ensure that exhaust ventilation hood systems in food preparation and warewashing areas including components such as hoods, fans, guards, and ducting are designed to prevent grease or condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.

Site: Children Area-
Violation: There was no airtight, washable waste receptacle in the children's toilet room.
Recommendation: Ensure that an airtight, washable waste receptacle is conveniently located to dispose of excrement and soiled sanitary wipes that cannot be disposed of in the toilet and gloves and waste materials are removed from the child-activity center each day.
