Site: Buffet-Market Cafe Beverage Stations
Violation: The panels around the dispensing chutes on some of the combination ice/water dispensers were corroded where the galvanized metal came into contact with the stainless steel. This item was on the previous inspection and the panels on two of the units have been replaced.
Recommendation: Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: The plastic coating on one of the recessed light bulbs above the carving station was peeling. The bulb was replaced during the inspection.

Violation: There were two wheeled carts, each with two trays of soiled glasses and a soiled ice scoop. This room also contained linens and chemicals.
Recommendation: Ensure that soiled items are stored in an appropriate warewashing area to be cleaned and sanitized.

Violation: A soiled dispensing bottle labeled 'chocolate' was stored in the dry stores cabinet across from the ice machine. The bottle appeared to have been rinsed out, and there was liquid and chocolate residue inside. The bottle was removed.
Recommendation: Ensure that soiled items are stored in an appropriate warewashing area to be cleaned and sanitized.

Violation: The crew member on the clean end of one of the conveyor warewash machines was sweating excessively. This area was hot and humid. No clean items were impacted and the crew member was sent on a break.
Recommendation: Ensure that all food preparation, warewashing, and toilet rooms have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes.

Violation: Combination oven #3 had been out of order since 5 June 2011. Spare parts were expected to arrive on 26 August 2011.
Recommendation: Repair Combination oven #3 as soon as possible or remove it from service.

Site: Bar-Beer Garden
Violation: The swinging door from the open deck front bar to the pantry was propped open during service. According to the bar manager, the door was open while one of the bartenders was restocking beverages. There were no flies in the pantry.
Recommendation: Ensure that entry points where pests may enter the food areas are protected.
