THE DISTILLATE TRANSFER LINE IN THE AFT PORTSIDE BUNKER STATION WAS PAINTED A BLUE AND WHITE COLOR AND STRIPED BLUE AND YELLOW DIFFERENTIATING IT FROM THE POTABLE WATER LINES.
THE HOSE FITTING WAS DIFFERENT FROM THE POTABLE WATER FILLING LINE CONNECTIONS DECREASING THE POTENTIAL FOR CONNECTION MISTAKES.

Paint the distillate transfer line a different color than the potable water filling lines.

THE DAIRY PRODUCTS HAD COME FROM THE DECK 12 HORIZON COURT GALLEY WHERE THE PRODUCT TEMPERATURES WERE CHECKED AND THE TEMPERATURES WERE AT 38 F.
THE SOUS CHEF FOR THE AREA CHOSE TO DISCARD THE PRODUCT BUT COULD HAVE BLAST CHILLED IT DOWN TO 41 F.

Ensure that the refrigerators are able to maintain food temperatures at or below 41F.

THE TEMPERATURE LOGS INDICATED THE FINAL RINSE TEMPERATURE WAS MEASURED AT 184F AT NOON. UPON INVESTIGATION, IT WAS FOUND THAT THE FINAL RINSE SPRAY ARMS WERE NOT PROVIDING PROPER COVERAGE DUE TO A MISSING RUBBER PLUG. THE RUBBER PLUG WAS LOCATED AND REINSERTED.

Recommendation:
In a mechanical operation, ensure that the temperature of the fresh hot water sanitizing rinse as it enters the manifold is not more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F); or (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.
