Site: Potable Water-
Violation: THE FREE CHLORINE RESIDUAL FOR THE PRODUCED WATER WAS PERFORMED DURING SHIFTS THAT WERE RECORDED AS 00:00/02:00; 02:00/06:00; AND 06:00/08:00. GIVEN THIS IT WAS POSSIBLE TO PERFORM THESE TESTS MORE THAN 4 HOURS APART.
Recommendation: Ensure that free residual halogen monitoring is performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Violation: MOST OF THE POTABLE WATER LINES WERE STRIPED BLUE BUT IN MANY LOCATIONS THESE STRIPES WERE MORE THAN 15 FEET APART. THE POTABLE WATER LINES IN THE LAUNDRY WERE NOT STRIPED BLUE.
Recommendation: Ensure that potable water piping is painted light blue or striped with 15 cm (6 inches) light blue bands or a light blue stripe at fittings on each side of partitions, decks, and bulkheads and at intervals not to exceed 5 m (15 feet) in all spaces, except where the decor would be marred by such markings.

Violation: THERE WAS NO INDICATION FROM THE POTABLE WATER TANK MAINTENANCE RECORDS, PRIOR TO APRIL 2005, THAT THE TANKS WERE FLUSHED PRIOR TO BEING PUT BACK IN TO USE.
Recommendation: Ensure that the disinfected parts of the system are flushed with potable water until the free residual halogen is 5.00 mg/L (ppm).

Violation: THE BACKWASHING OF THE SAND FILTERS WAS AUTOMATED. THERE WAS NO INDICATION THAT THE 4 MINUTES WAS SUFFICIENT TO PRODUCE CLEAR WATER.
Recommendation: Ensure that granular filters are backwashed at least daily until the sight glass indicates a clean flow and that the uniformity of the backwash action is observed, where possible. Ensure that other types of filter media are backwashed or cleaned at the frequency specified by the manufacturer.

Violation: RAW CHICKEN BREASTS WERE STORED OVER A PAN OF MUSTARD AND CANS OF PINEAPPLE JUICE IN THE UNDERCOUNTER REFRIGERATION UNIT.
Recommendation: Ensure that food is protected from cross-contamination by: (1) Physically separating raw animal foods during storage, preparation, holding, and display from raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as vegetables, and cooked ready-to-eat food; so products do not physically touch, and so as to prevent dripping of one product into another.

BUS PANS WERE STORED ON THE DECK IN THIS AREA.
Recommendation: Ensure that cleaned equipment and utensils, laundered linens, and single-service and single-use articles are stored: (1) In a clean, dry location; (2) Where they are not exposed to splash, dust, or other contamination; and (3) At least 15 centimeters (6 inches) above the deck.
