SERVICE UTENSIL HANDLES, LOCATED AT THE TACO BAR, WERE SHORTER THAN THE FOOD PANS LOCATED ON THE SERVICE LINE ALLOWING THE HANDLES, AND PASSENGER'S HANDS, TO CONTACT AND CONTAMINATE THE CONTENTS. THE PANS CONTAINED GROUND BEEF, REFRIED BEANS, TOMATOES, ONIONS, LETTUCE, TACO SAUCE, ETC. STAFF INDICATED THAT THE UTENSILS WERE REPLACED WITH CLEAN ONES WHEN THEY FELL INTO THE PANS.

Recommendation:
Ensure that consumer self-service operations, such as salad bars and buffets, for unpackaged ready-to-eat foods are provided with suitable utensils or effective dispensing methods that protect the food from contamination; and are monitored by food employees trained in safe operating procedures. Provdie service utensils with handles longer than the product pans to prevent the utensils from falling into the food product.

Recommendation:
In a mechanical operation, ensure that the temperature of the fresh hot water sanitizing rinse as it enters the manifold is not more than 90C (194F), or less than: (1) For a stationary rack, single temperature machine, 74C (165F); or (2) For all other machines, 82C (180F); or (3) A utensil surface temperature of 71C (160F) as measured by an irreversible registering temperature indicator shall be achieved. (4) The maximum temperature of 90C (194F), does not apply to the high pressure and temperature systems with wand-type, hand-held, spraying devices used for the in-place cleaning and sanitizing of equipment such as meat saws.

3-4 DRAIN FLIES WERE NOTED AROUND THE HAND SINK. IPM RECORDS INDICATED THAT THERE IS AN ON-GOING 'FRUIT FLY' PROBLEM IN THE GARBAGE ROOM AND SOME GALLEY AREAS. THE IPM STAFF WERE ACTIVELY WORKING ON THE PROBLEM. THE FLIES APPEAR TO BE ORIGINATING FROM THE FLOOR DRAINS AND MAY NOT BE FRUIT FLIES, WHICH WILL REQUIRE A DIFFERENT CONTROL APPROACH.

Recommendation:
Ensure that pests are accurately identified so that an effective control plan can be developed to eliminate/control them. Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.
