THE ELECTRONIC RECORDS FOR ANNUAL TESTING OF ALL THE REDUCED PRESSURE ASSEMBLY BACKFLOW PREVENTION DEVICES DOCUMENTED A TEST WAS PERFORMED IN 2005, BUT THE COMMENT WAS ONLY THAT THE TEST WAS COMPLETED. THERE WAS NO RECORD OF THE PRESSURE DIFFERENTIALS BETWEEN THE VALVES ON THE BACKFLOW PREVENTERS.

Recommendation:
Ensure that backflow prevention devices requiring testing, for example reduced pressure backflow preventer and double check valves with test cocks, are inspected and tested with a test kit at least annually and that the test results showing the pressure differences on both sides of the valves are maintained for each device.

A CAN OF PINEAPPLE JUICE WITH A SEVERE DENT TO THE TOP SEAM WAS FOUND IN THE UNDERCOUNTER STORAGE CABINET FOR JUICES IN THE BELL BOX PANTRY. THE CAN WAS IMMEDIATELY REMOVED AND DISCARDED.

Recommendation:
Ensure that food packages are in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Canned goods with dents on end or side seams may not be used. Severely dented cans should be identified and sorted prior to deliver in preparation spaces.

CONDENSATION WAS FORMING ON THE DECKHEAD AND DRIPPING DIRECTLY ONTO STORED FRUIT PRODUCTS. THE COMPANY WAS AWARE OF THE SITUATION AND THE PUBLIC HEALTH OFFICER STATED THAT, BY WRITTEN POLICY, ALL FRUITS WERE PLACED IN A 10PPM CHLORINE DIP AND RINSED PRIOR TO ANY CUTTING OR OTHER SERVICE PREP.

Recommendation:
Ensure that food is not stored under areas which water has condensed. Until the problem can be addressed during dry dock, there are various options to the instituted washing practice (i.e. provide a barrier between the deck head and the product).

THE SERVING TONGS FOR THE TWO LARGE BOWLS OF LETTUCE ON THE SELF-SERVICE BUFFET WERE TOO SHORT IN LENGTH FOR THE BOWLS. THE UTENSIL HANDLES WERE IN-CONTACT WITH LETTUCE, WHICH LED TO PASSENGER CONTAMINATION FROM HANDLING THE TONGS. NEARLY ALL OTHER UTENSILS WERE APPROPRIATELY SIZED FOR THE SERVING CONTAINERS.

Recommendation:
Ensure that consumer self-service operations, such as salad bars and buffets, for unpackaged ready-to-eat foods are provided with suitable utensils or effective dispensing methods that protect the food from contamination; and are monitored by food employees trained in safe operating procedures.

Ensure that nonfood-contact surfaces of equipment and utensils are designed and constructed to be durable and to retain their characteristic qualities under normal use conditions.

Violation:
THERE WERE SOILED PANS STAGED ON THE COUNTER DIRECTLY ABOVE THE UNDERCOUNTER DISHWASHING MACHINE. THERE WAS A DECK STAND IN FRONT AND BELOW THE DOOR TO THE UNDERCOUNTER DISHWASH MACHINE WHICH WAS HALF-FILLED WITH SOILED POTS AND PANS AND DIRECTLY ACROSS FROM THE POTWASH MACHINE. THERE DID NOT APPEAR TO BE SUFFICIENT DIRTY STORAGE SPACE. ITEMS REMOVED FROM THE UNDERCOUNTER DISHWASHER COULD BECOME SOILED FROM THE DIRTY ITEMS SURROUNDING THE DOOR.

Recommendation:
Ensure that drainboards, utensil racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing. Some review of the space and equipment installation is needed in this area and there should be additional storage provided for soiled items to give proper separation from clean at the potwash machine and dishwash machine.

CONDENSATE WAS BUILDING UP BEHIND THE DECKHEAD PANELS AND DRIPPING FROM THE DECKHEAD SEAMS. NO FOOD WAS AFFECTED IN THE CHEESE STORE, HOWEVER CONDENSATE WAS OBSERVED DRIPPING ONTO FRUITS THROUGHOUT THE FRUIT WALK-IN REFRIGERATOR.

Ensure that exhaust ventilation systems are designed to prevent condensation from draining or dripping onto food, equipment, utensils, linens, and single-service and single-use articles.
