These stacks of bins were also stored along the bulkhead directly opposite to and less than one meter away from the #2 and #3 combination ovens, which were in active cooking at the time. The #3 combination oven door could not be opened without impacting the stacked soiled plastic food bins opposite.

Recommendation:
Ensure drainboards, utensils, racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.
