Violation:
A mobile hot trolley was set in the galley unplugged and contained several sheet pans of fresh pastries, including at least one with cream cheese danish. Staff stated that the trolley was used to transport the various pastry items to Cabana's where it is staged to hold the trays in back-up for the same foods on the buffet line. The trolley did not have a label stating it was on time control. There was a small discard label on the top left exterior noting the starting and discard time. An identical mobile trolley in the same galley had a permanent blue label with the words time control inscribed.

Recommendation:
Maintain a written time control plan(s) that ensures compliance with these guidelines on the vessel and make it available for review during inspections. Post a time control plan at each outlet where time control is used. Ensure plan(s): (1) Includes set-up and discard times for each outlet. (2) List refrigeration and hot holding units (compartments and cabinets) on time control (the physical units must also be labeled as such). (3) Describe or show the flow of potentially hazardous food from when last in temperature control to placement in time control and discard.
Provide and affix to the exterior of this pastry trolley a label stating time control. Ensure the trolley has some identification number so it is also noted among the units on time control for the time control plan.

Violation:
The toasted bread and rolls were set in paper-lined wicker type baskets for passenger self-service. The liner paper was not extended fully across each wicker basket, so these bakery foods were in direct contact with the baskets. The overlapping woven construction of the baskets make the surfaces throughout not acceptable for food contact.

Recommendation:
Replace the wicker baskets with some container which is meant for food contact or provide additional liner paper so it can be arranged across the entire surface of each basket and protects breads displayed there. Protect food from contamination that may result from a physical, chemical, biological origin.

The dough sheeter belt had loose, hair-like fibers extending from both side edges of the belt throughout its length. Some of the fibers were quite loose and easily removed from the belt.

Recommendation:
Food contact equipment must be maintained in good repair and proper adjustment: (1) Equipment must be maintained in a state of repair and condition that meets the materials, design, construction, and operating specifications of these guidelines. Design and construct food contact surfaces of equipment and utensils to be durable and to retain their characteristic qualities under normal use conditions.

The in-use conveyor glass washing machine had no spray coming from the upper arm hot water sanitizing spray rinse nozzles, and although there was spray from the lower arm final rinse nozzles, the height of the spray reached only to the bottom of the dishware racks. Staff repaired the machine during the inspection.

During active use of the flight-type conveyor dishwashing machine, the final rinse upper spray arm nozzles were producing a weak spray pattern that resulted in a water stream instead of a broad spray. A complete spray covering the space between the spray nozzles was not observed. Staff repaired the machine during the inspection.
