Violation:
Sea-to-sea mode was not written consistently on the chart records for the three pools. At least 20 dates between the three pools going back to September 2013 were found where the pools were in sea-to-sea mode but no notation was made on the analyzer chart record. Several more records showed the three pools opening in recirculation mode and switching to sea-to-sea mode later in the day again with no notation made on the analyzer chart record. No calibration record was made on the analyzer chart recorder for the aft pool on 30 January 2014 and 31 December 2013. No calibration record was made on the analyzer chart recorder for the forward whirlpool 18 January 2014.

Recommendation:
Ensure logs and charts contain notations outlining actions taken when the free halogen residual or pH levels are outside of the acceptable ranges in this manual. Additionally, ensure the records include any major maintenance work on the filtration and halogenation systems and UV disinfection systems. Ensure a written or electronic log of RWF filter inspection results, granular filter sedimentation test results, backwashing frequency and length of backwashing, and date and time of water dumping is available for review during inspections.

Condensate was observed on the deckhead and in the inside of the ventilation hood canopy above the warewasher. The exhaust system had been turned off for a fire system testing during this part of the inspection.

Ensure ventilation hood systems and devices operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them.

Frozen leaks were noted from the deckhead seams. Ice had accumulated on the deck at several places below the leaks. These leaks were from condensate from the recent dry dock where the entire freezer deckhead had been opened up. No food was impacted by these leaks.

Remove accumulated ice and ensure condensate does not accumulate and freeze again.

Two purses which belonged to non-ship personnel setting up this new food operation were found in the back counter. One was adjacent to the handwash sink and the other was in a cabinet with food items. These were removed. The operation was not open at the time these purses were observed.
