Violation:
A cook became ill with acute gastroenteritis symptoms at 22:30 on 22 June 2014. After experiencing symptoms, contrary to the ship's policies and training and the VSP Operations Manual, the worker reported to work without informing the supervisor of the illness. This worker did not report the illness to the medical center until 09:39 on 23 June 2014. This worker was immediately terminated from employment.

Recommendation:
Ensure food employees who have conditions or symptoms of diarrhea and/or vomiting report these conditions or symptoms to the vessel's medical staff and are restricted from working with exposed food, warewashing, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.

The cooling logs were not completed for boiled eggs on 28 June. No temperatures were written at 10:57 and 12:25. The log was initialed by the person responsible.

Recommendation:
Ensure the cooling temperatures of cooked potentially hazardous foods are documented. Potentially hazardous foods shall be cooled from 57C (135F) to 21C (70F) or less within 2 hours and from 21C (70F) to 5C (41F) or less within an additional 4 hours.

To the left of the oven, the middle bulkhead panel was misaligned. The right side of this panel was spot welded, exposing seams. There was a large hole at the lower area of the panel, leading into a void space. Staff stated the wires for the newly installed flat grill were being replaced.

Recommendation:
Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair.

The bar was in operation during the inspection. The normal operating lights only provided 50 lux at the bar counter's handwashing sink. The lights could be adjusted to a brighter illumination which was demonstrated to the inspection team.

Ensure the light intensity is at least 110 lux (10 foot candles) at handwashing stations in bars.

Recommendation:
Ensure the light intensity is at least 220 lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

A broom and dustpan were stored near the soiled storage. The area was in operation during the inspection. These items were moved to the cleaning locker.

Recommendation:
Ensure maintenance tools such as mops, brooms, and similar items are stored in a designated locker so they do not contaminate food, food-contact surfaces of utensils, and equipment, linens, and single-service and single-use articles.
