Site: Recreational Water Facilities-Oasis Whirlpool
Violation: The turnover rate and bather load were not calculated per the flow rate as measured by the flow meter. These calculations were presented to the inspector after the finding.
Recommendation: For RWFs with skim gutters, ensure that the fill level of the RWF is to the level of the skim gutters. Design recirculation systems and equipment, including chemical control equipment, UV disinfection systems, filter, and pumps to maintain adequate water chemistry control while operating at the following minimum turnover rates: (5) whirlpool spa: 0.5 hours. Maintain documentation on the maximum bather load for each RWF. Ensure the maximum bather load is based on the following factor: one person per five gallons (19 liters) per minute of recirculation flow.

Site: Buffet-Horizon Court
Violation: On the center station time control preparation counter outside the pantry, an open container of milk was not labeled with the 4-hour discard time.
Recommendation: Working containers and mis-en-place containers of potentially hazardous foods placed on time control must be labeled with their 4-hour discard time, even if the service period is less than four hours. This is to prevent the potentially hazardous food item from being returned to temperature control once placed on time control.

Violation: Platters of melons, sliced bread, and muffins did not have a serving utensil.
Recommendation: Provide food-dispensing utensils for each container displayed at a consumer self-service unit such as a buffet or salad bar.

Site: Provisions-Across from Room #4 Chef Decoration Store
Violation: A pallet of sugar bags was stored below the insect glue trap. The pallet was immediately relocated.
Recommendation: Do not locate insect control devices, such as insect light traps, over food storage, food preparation areas, food service stations, or clean equipment. Prevent dead insects and insect fragments from falling on exposed food.

Violation: The right side ice machine bin was open and no crew member was obtaining ice or near the machine at the time.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected.

Site: Bar-Mermaid Tail Bar and International Cafe Bar
Violation: The counter ice bins were partially open when no crew member was obtaining ice. The ice scoop was inside a plastic cup near the front inside of the bin, but the handle protruded above the lid which prevented the lid from fully closing.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected.

Violation: The espresso machine power line tube was laying on the counter, making cleaning difficult.
Recommendation: Elevate the tube off the counter to allow for easy cleaning.

Violation: When looking into the dishwash machine from the clean end, the far left upper final rinse sanitizing spray nozzle appeared to produce a single stream of water. It was determined this nozzle was slightly turned, so the effective spray pattern was parallel to the machine. Staff explained they will correctly reposition the spray nozzle.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines.

Violation: At the oatmeal station, one clean cup out for passenger service was soiled with food debris on the inside.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The undercounter refrigerator technical space was heavily soiled. Crew started to clean the area immediately.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The deck drain below the undercounter refrigerator was heavily soiled with coffee debris.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: Next to the deep fryers, gaps were around the left steam pipe where it penetrated the bulkhead.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning.

Violation: One of the deckhead lights was not working resulting in the light intensity less than 220 lux over the warewashing area. This was corrected during the inspection.
Recommendation: Ensure the light intensity is at least 220 lux (20 foot candles) on food preparation surfaces, and at a distance of 75 centimeters (30 inches) above the deck in food preparation areas, handwashing facilities, warewashing areas, equipment, and utensil storage, pantries, toilet rooms, and consumer self-service areas.

Recommendation: Ensure only articles necessary for the food service operation are stored in food preparation, food storage, and warewashing areas.

Violation: One fly was in the glassware and utensil cabinet area.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.

Site: Integrated Pest Management-IPM Training
Violation: A pesticide applicator and the horticulturist had no IPM training documented. The horticulturist accepted a large shipment of flowers on the day of the inspection and assured that he checked for pests. These persons documented their actions in IPM logs.
Recommendation: Ensure the IPM Plan includes provisions for logs for active monitoring of pest sightings in operational areas of the vessel. Ensure the IPM plan includes provisions for training of crew members in charge of log completion. Record the time of the active monitoring inspections in the log. Document the training of the pest-control personnel.

Recommendation: Completely separate the blocks before cleaning and sanitizing.

Violation: Staff stated how a girl vomited in the area the day before the inspection. The girl was accepted back to the area after a phone call from the medical staff to the youth center staff. There was no written medical clearance for the girl. The posted Exclusion Policy included a requirement for written clearance from the medical staff before a child with symptoms of infectious illness can be allowed back in the children's center.
Recommendation: Do not allow children with infectious illness in the child activity center without written permission from the vessel's medical staff.
