Site: *General Comment-Procedures and Records
Violation: The procedures and records in medical, potable water, recreational water, integrated pest management, housekeeping, ventilation, and the child activity center were thorough and complete.

Site: Medical-Crew Acute Gastroenteritis (AGE) Reporting
Violation: On 15 July, a crew member had an onset of AGE symptoms (diarrhea) at 0600. He had two additional diarrhea episodes before reporting to medical at 0930. He worked during while symptomatic. He received a disciplinary warning for the late reporting.
Recommendation: When food employees meet the case definition for AGE, ensure the following actions are taken: (1) isolate in cabin or designated restricted area until symptom-free for a minimum of 48 hours; (2) follow-up with and receive approval by designated medical personnel before returning crew to work; (3) document date and time of last symptom and clearance to return to work. When nonfood employees meet the case definition for AGE, ensure the following actions are taken: (1) isolate in cabin or designated restricted area until symptom-free for a minimum of 24 hours; (2) follow-up with and receive approval by designated medical personnel before returning crew to work; (3) document the date and time of last symptom and clearance to return to work.

Site: Provisions-Freezer #6
Violation: The egg products inside the freezer had water was dripping from a light fixture adjacent to them. No food was impacted by this potential source of contamination.
Recommendation: Protect food from contamination by storing the food: (2) In a clean, dry location; and (3) Where it is not exposed to splash, dust, or other contamination.

Site: Galley-Ice Machines
Violation: All of the ice machines inspected contained a grey spongy absorbent insulation on the cuber splash panel which is difficult to clean and sanitize.
Recommendation: Ensure nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a nonabsorbent, and smooth material.

Violation: More than 4 wiping solution buckets were observed with a dirty oily sheen on the surface.
Recommendation: Ensure sanitize solutions are maintained clean.

Violation: Two previously cleaned plates in a stack placed out for food service had old food debris on them.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: Dead insects were noted in the light fixture above the hand wash station.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.
