Site: Buffet-Waiter/Bussing Stations
Violation: Several stations were set up throughout the dining area to serve as waiter stations for clean items and coffee carafes, as well as bussing stations for soiled items. The deck in front of these areas was carpet and there was no coving. None of the decks were soiled. Staff reported these areas will be converted during the April 2016 dry dock.
Recommendation: Cove all bulkhead/deck, equipment/deck, cabinet/deck, and deck sink coaming/deck junctures (including galleys, pantries, buffets, bars, waiter stations, dining room work counters, provisions, food storage rooms, equipment/utensil storage rooms, and toilet rooms intended for use by galley personnel). Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning. Do not use carpet in these areas.

Site: Galley-Dishwash Area
Violation: The digital readout screen on the in-use flight type conveyor dishwash machine had condensate collected on the inside, making it difficult to read.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Site: Galley-Dishwash Area - Clean Storage Racks
Violation: The back side of a bowl had dried food residue. The back side of a plate had a small hair. Both items were sent to the soiled area.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The deck was pitted by the grill and the dishwasher.

Site: Other-Neptune Lounge
Violation: The deck in front of the straight buffet counter was carpeted. This was written on the last three inspections. Staff provided documentation that the area will be fitted with tiles during the April 2016 dry dock.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning. Do not use carpet in these areas.

Site: Galley-Pinnacle Grill Dishwash
Violation: Three waste bins with food waste or containers that previously held food were uncovered in the soiled drop off area and no crew members were working in the area when the inspection team arrived. Shortly after, a crew member arrived and started the dishwash machines. Breakfast had been served in the Pinnacle Grill.
Recommendation: Cover receptacles and waste-handling containers when not in continuous use and after they are filled.

Violation: The waste receptacle was partially blocking the handwashing station.
Recommendation: Ensure handwashing facilities are used for no other purpose and are accessible at all times.

Violation: The deck was in disrepair and pitted in several areas. This was written on the previous inspection. Staff provided documentation that this area would be corrected during the April 2016 dry dock.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair.

Site: Bar-Explorations
Violation: A container of cleaning tablets for the coffee machine was stored on the counter next to the coffee machine. These were moved to the cleaning locker in the pantry.
Recommendation: Store poisonous or toxic materials used in the cleaning and maintenance of food areas in a cleaning materials locker so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles.

Site: Bar-Lido
Violation: The front bar deckhead was covered with a very absorbent and difficult to clean cloth fabric in a circular, overlapping pattern. This was written on the previous three inspections. Staff provided documentation that the deckhead material will be replaced during the April 2016 dry dock.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning. Do not use carpet in these areas.

Site: Medical-Acute Gastroenteritis (AGE) Reporting
Violation: A crew member reported to the medical center on 31 January at 12:30pm after experiencing two episodes of diarrhea starting at 09:30am. This crew member, who was not a food handler, worked the morning of 31 January from 07:30am to11:30am. The crew member was issued a formal written warning for reporting late.
Recommendation: When nonfood employees meet the case definition for AGE, ensure the following actions are taken: (1) isolate in cabin or designated restricted area until symptom-free for a minimum of 24 hours; (2) follow-up with and receive approval by designated medical personnel before returning crew to work; (3) document the date and time of last symptom and clearance to return to work.

Site: Children Area-Toys
Violation: Two large toy boats were soiled with more than a day's worth of dust and debris. Staff stated these toy boats were too big to be cleaned and sanitized in a dishwash machine, so they were cleaned and sanitized by hand every night. Also, the plastic bin used to store the plastic play kitchen equipment had an accumulation of dust and debris around all four inside corners of the bin. Clean toys were stored in this bin.
Recommendation: Ensure toys used in the child-activity center are maintained in a clean condition.

Site: Recreational Water Facilities-Center Pool
Violation: Five tests to measure the bromine level were conducted at the open center pool by both the inspector and crew engineer. The inspector measured bromine at 4.60 ppm, 5.39 ppm, 5.19 ppm, and 5.54 ppm. The crew engineer measured bromine at 5.47 ppm, 5.55 ppm, 4.94 ppm, and 5.29 ppm. The tests were taken from different areas of the pool. The pool was immediately closed.
Recommendation: Maintain a free residual halogen in recirculated RWFs in the following ranges: (1) swimming pools, between 1.0 and 5.0 mg/L (ppm).

Site: Recreational Water Facilities-Aft Port Whirlpool Spa
Violation: The water temperature was measured at 106.5F. The facility was open during the inspection and was immediately closed.
Recommendation: Provide a temperature-control mechanism to prevent the temperature from exceeding 40C (104F) on whirlpool spas and spa pools.
