Site: Pantry-Deck 8 Forward
Violation: The chilled water line was not uniquely identified, and was striped blue green blue. This was corrected.
Recommendation: Uniquely identify all refrigerant brine lines in all galleys, pantries, and cold rooms to prevent cross-connections.

Violation: A screw blocked the atmospheric relief vent on the backflow prevention device installed on the potable water supply line to the rack-type glass wash machine.
Recommendation: Maintain backflow prevention devices in good repair.

Violation: A corkboard was installed on the bulkhead above the soiled equipment staging area.
Recommendation: Ensure nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: The left side spray arm on the final rinse in the flight-type dishwash machine was loose and not connected while the machine was in active use.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Violation: Several of the large circular light fixtures on the deckhead were heavily corroded. Two of the light fixtures were also heavily soiled with grease residue.

Violation: The profile strip in the back right corner of the room at the deckhead/bulkhead juncture was loose, which created a large gap.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair. Violation: Condensation had accumulated on the deckhead and bulkhead around soiled landing area on the flight-type dishwash machine. The soiled landing area was excessively hot; several employees working in the area were sweating heavily.
Recommendation: Ensure all food preparation, warewashing, and toilet rooms have sufficient ventilation to keep them free of excessive heat, steam, condensation, vapors, obnoxious odors, smoke, and fumes. Ensure ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.

Violation: The ice machine has not been used in over 6 months and was no longer needed for the operation.
