Site: *General Comments-Technical Areas
Violation: All the technical areas (i.e. medical, potable water, recreational water, housekeeping, integrated pest management, ventilation, and kid's center) reviewed during the inspection were found in compliance with the 2011 VSP Operations Manual. Staff in each area were organized, knowledgeable and kept detailed records.

Site: Provisions-Fresh Fruit Room
Violation: Most of the vinyl bags of rice on a pallet stored in the fresh fruit room were wet to the touch. Staff stated the pallet was moved from the dry store room the previous night to make room for the incoming provisions. No water was leaking from the deckhead so it was unclear how the bags became wet. All the bags appeared to be in good condition and no rice was contaminated.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck.

Site: Buffet-Deck 15 - Horizon Court
Violation: A ladle for sticky rice was in a container of water on the service line for crew to use in the sticky rice. The water in the container was measured at 132F and did not fully cover the bowl part of the ladle. This container of water and the ladle were removed.
Recommendation: During pauses in food dispensing, ensure food preparation and dispensing utensils are stored: (6) In a container of water (if the water is maintained at a temperature of at least 57C [135F] and the container is frequently cleaned and sanitized).

Site: Preparation Room-Deck 5 - Production Bakery
Violation: A flour bin lid was not completely closed.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected.

Site: Food Service General-Ice Machines
Violation: The plastic ice harvest slide was soiled with a brown residue on the upper most and far sides on ice machines in the Horizon Court galley, Deck 14 Lido preparation galley and Share Galley.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The previously-cleaned blue plastic pitcher in the waiter station clean storage was soiled with a brown residue. This pitcher was removed for rewashing or discarding.

Violation: The previously-cleaned non-automatic cleaning combination oven was soiled with old food debris and grease inside. Cleaning commenced while the team was in the area.

Violation: The previously-cleaned ice cream machine parts stored on a plastic tray was soiled with grease around the valve 'O' rings. These parts were taken for rewashing.

Violation: A double drawer bread warmer was stored in this room with food debris in the bottom of each drawer.

Violation: A closed portable ice bin that had been previously cleaned had water standing in the bottom.
Recommendation: After cleaning and sanitizing, ensure equipment and utensils are adequately drained before contact with food.

Violation: Plastic glasses in the forward, starboard beverage station were out for service and were wet when they were placed on a plastic tray which prevented their air drying.
Recommendation: After cleaning and sanitizing, ensure equipment and utensils are air dried or adequately drained before contact with food.

Violation: The electrical conduit to the floor-mounted mixer was disconnected from the bulkhead. A repair team was repairing while the inspection team was in the area.
Recommendation: Ensure bulkheads in food areas are maintained in good repair.

Violation: Deck drain in scupper below forward cold prep hand sink was not draining. It was repaired while inspection team was in the area.
