Violation:
The safety signs for the one pool and two whirlpools stated to not use the facility if experiencing any kind of illness, instead of stating to not use if experiencing diarrhea, vomiting, or fever. The signs were corrected immediately.

Recommendation:
Provide safety signs for all RWFs, except for baby-only water facilities. Ensure the signs, at a minimum, include the following words: (1) do not use these facilities if you are experiencing diarrhea, vomiting, or fever.

Violation:
Condensate was collected on the interior of the exhaust hood and on the bulkhead behind the steam kettle, tilting pan, and two pasta boilers. The condensate was dripping onto the area behind the cooking equipment. No food was impacted. All four pieces of equipment were filled with water only and were on full boil.

Recommendation:
Ensure ventilation hood systems and devices are sufficient in number and capacity to prevent grease or condensation from collecting on bulkheads and deckheads.

Violation:
Buffet area reach-in coolers T5 and T6 were incorrectly labeled for time control and were not listed on the time control plan. The incorrect labels were immediately removed from these temperature-controlled reach-in coolers. A very similar violation was found in the previous inspection.

Recommendation:
Maintain a written time control plan(s) that ensures compliance with these guidelines on the vessel and make it available for review during inspections. Post a time control plan at each outlet where time control is used. Ensure plan(s): (2) List refrigeration and hot holding units (compartments and cabinets) on time control (the physical units must also be labeled as such).

The right front seam of the bulkhead / grooved grill counter juncture was soiled with old food residue.

Recommendation:

Violation:
The left kettle valve gasket was broken and allowed old food residue mentioned above to lodge under the remaining gasket. The old gasket was replaced on the cleaned valve while the inspection team was in the area.

Recommendation:
Food contact equipment must be maintained in good repair and proper adjustment: (1) Equipment must be maintained in a state of repair and condition that meets the materials, design, construction, and operating specifications of these guidelines.

The atmospheric vent for the backflow prevention device on the hood washing system in the cabinet across from the tilting skillets was leaking continuously. The valve was replaced while the inspection team was still in the main galley.
