Site: Provisions-Deck 0 - Gift Shop Liquor Stores
Violation: Liquor in card boxes was stored directly on the deck. Crew moved the liquor immediately.
Recommendation: Protect food from contamination by storing the food: (4) At least 15 centimeters (6 inches) above the deck.

Site: Other-Deck 5 Gift Shop Store
Violation: Many boxes of liquor were stored directly on the deck. Management stated that these were temporarily located in the store, and would be relocated to deck 0 storage. It should be noted that there was not very much space in the Deck 0 storage to accommodate more liquor storage.
Recommendation: Protect food from contamination by storing the food: (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck.

Site: Galley-Deck 5 Pig and Anchor Barbeque
Violation: Along the interior edges of the two smokers' compartment, the surface was rough, making cleaning difficult.
Recommendation: Materials used in the construction of multiuse utensils and food contact surfaces of equipment must be: ((3) finished to have a smooth, easily cleanable surface; and (4) resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition.

Site: Galley-Deck 6 Room Service
Violation: The conveyor dishwasher machine was out of order and technicians were working to repair it. Staff reported this occurred in the morning.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Site: Galley-Deck 0 - Crew Galley - Potwashing
Violation: The final rinse cycle in the automatic potwashing machine did not activate at the end of the wash cycle. The machine was on when the inspection team entered the area, but no pots and pans were being washed at that time. The engineering team determined that the final rinse pump needed replacement. The pump was replaced and testing the final rinse temperature was continuing when the inspection team left the ship.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines.

Site: Buffet-Marketplace Starboard Midship Beverage Station
Violation: Blackish debris was noted along the left upper gasket on the upper rim of the counter mounted ice bin.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch. Ensure food only contacts surfaces of equipment and utensils that are cleaned and sanitized.

Violation: Black debris was noted on the upper region of the interior side of the cuber deflector shield. An excessive amount of granular black powder was also noted in the ice water recirculating bath. Staff took the ice machine out of service and immediately sanitized the equipment.
Recommendation: Ensure food only contacts surfaces of equipment and utensils that are cleaned and sanitized. Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Violation: The paper towels in the dispenser at the handwash station were wet. This was corrected.
Recommendation: Keep handwashing facilities clean and in good repair.

Recommendation: Ensure a handwashing facility includes a waste receptacle.

Violation: A container of window cleaning solution was stored on top of a liquor box.
Recommendation: Store poisonous or toxic materials used in the cleaning and maintenance of food areas in a cleaning materials locker so they cannot contaminate food, equipment, utensils, linens, and single-service and single-use articles.

Site: Pantry-Deck 1 Forward Starboard
Violation: A spray bottle filled with liquid was stored in a cleaning locker. Staff stated the liquid was bleach, but there was no label on the bottle indicating the contents. This was corrected at the time the unlabeled bottle was found.
Recommendation: Ensure working containers used for storing poisonous or toxic materials such as cleaners and sanitizers taken from bulk supplies are clearly and individually identified with the common name of the material.

Violation: The deck / self-service condiment station juncture was not coved to make the area easily cleanable.
Recommendation: Cove all cabinet/deck junctures to make it easily cleanable..

Site: Other-Deck 5 Gift Shop Store
Violation: The deck under the storage racks was not clean and damaged goods, to include cans of chips, were stored in this space. Management stated that the damaged goods would be removed later today. Also, the deck bulkhead juncture was not coved.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary. Cove all bulkhead/deck, equipment/deck, cabinet/deck, and deck sink coaming/deck junctures (including galleys, pantries, buffets, bars, waiter stations, dining room work counters, provisions, food storage rooms, equipment/utensil storage rooms, and toilet rooms intended for use by galley personnel).

Violation: The back right corner of the stores had a thick tan liquid on the deck Other old black soil was also on the deck under the shelving in this corner.
Recommendation: Ensure decks in food storage areas are cleaned as often as necessary.

Violation: The back center sprinkler head was dripping. The water was going to a walking area of the deck. Stored food was not impacted.
