Site: Galley-Dishwash Area
Violation: Water was intermittently flowing from the top of the atmospheric vacuum breaker on the detergent dispenser for the flight-type conveyor dishwash machine. The device was replaced before the end of the inspection.
Recommendation: Maintain backflow prevention devices in good repair.

Site: Galley-Decks 5 Pastry
Violation: On ice cream machine 1, the chilled water line label was missing on one line and partially peeling off the other line. This was corrected.
Recommendation: Stripe or paint potable water lines either in accordance with ISO 14726 (blue/green/blue) or blue only. Stripe or paint distillate and permeate lines directed to the potable water system in accordance with ISO 14726 (blue/gray/blue). Ensure no other lines have the above color designations. Stripe or paint these lines at 5 meters (15 feet) intervals and on each side of partitions, decks, and bulkheads, except where decor would be marred by such markings, including potable water supply lines in technical lockers. Do not stripe or paint potable water lines after reduced pressure assemblies as potable water. Uniquely identify all refrigerant brine lines in all galleys, pantries, and cold rooms to prevent cross-connections.

Site: Pantry-Officer's Mess
Violation: One large can of peaches was dented on the bottom seam. The can was discarded.
Recommendation: Ensure food packages are in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Ensure canned goods with dents on end or side seams are not used.

Site: Other-Garbage Room
Violation: Three unopened bottles of champagne and a 12 package of soda were stored on the deck in this area.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck.

Site: Buffet-Horizon Court
Violation: The sneeze shields on the entry end of the buffet lines did not extend far enough down to protect the food during service. During lunch a young adult was observed beside the sneeze shield within one meter of the food while waiting to enter the buffet. Staff reported that redesign of this area is in the planning stage and mock-up is being reviewed for installation.
Recommendation: Protect food on display from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; self-closing hinged lids; or other effective means. Install side protection for sneeze guards if the distance between exposed food and where consumers are expected to stand is less than 1 meter (40 inches).

Site: Pantry-Pantry 8528
Violation: The glass washer in this pantry was marked out of order since the morning of the inspection.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Violation: The insulation in the technical compartment for undercounter refrigerators 11/12 was soiled. Staff stated a team was on board replacing insulation in all the technical compartments.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The faucet for the left steam kettle was dripping into the previously cleaned and air dried kettle. The faucet was moved immediately so it was no longer dripping into the kettle.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck.

Site: Galley-Crown Grill Show Galley
Violation: A vase of fresh flowers was on top of the front granite countertop between two trays of clean wine glasses and one rack of soup bowls. The flowers were removed immediately.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck.

Violation: The deckhead was dusty in the recess for the fire shutter door.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: Liquid was dripping from a deckhead hatch to the deck in front of the handwashing station. No food items were impacted. This item was reported as corrected.

Violation: The frames around the deck sinks were corroded and had peeling paint. Staff stated these would be replaced in the March 2019 dry dock.

Violation: The deck grout was missing and recessed in several areas. Staff provided a procurement form indicating that grout would arrive on the vessel on April 7.

Violation: At the wine display cabinets, there was no coving at the cabinet/deck juncture. Food items such as condiments, salt, tea, coffee, an open bottle of wine, and jams as well as single service items such as cups were stored in the lower cabinets. Staff began removing the items before the inspection team left the area.
Recommendation: Cove all bulkhead/deck, equipment/deck, cabinet/deck, and deck sink coaming/deck junctures (including galleys, pantries, buffets, bars, waiter stations, dining room work counters, provisions, food storage rooms, equipment/utensil storage rooms, and toilet rooms intended for use by galley personnel).

Violation: The deck under the liquor and supply storage lockers was soiled. The area was being cleaned before the inspection team left the area.
