Violation:
On 6 February 2018, a food service crewmember had several episodes of diarrhea and was considered a reportable case by the medical staff. The AGE log stated the symptom onset began at 19:00; however, the crew member did not report to medical until the following day at 09:11 on 7 February 2018. The crew member was not isolated at the proper time according to the reported symptom onset period. Additionally, the inspector noted the crew member went to work at 01:27 on the 7 February 2018, and worked until 03:53. Staff presented the inspector the formal letter of reprimand that was discussed with the crewmember.

Recommendation:
When food employees meet the case definition for AGE, ensure the following actions are taken: (1) isolate in cabin or designated restricted area until symptom-free for a minimum of 48 hours; (2) follow-up with and receive approval by designated medical personnel before returning crew to work; (3) document date and time of last symptom and clearance to return to work. When nonfood employees meet the case definition for AGE, ensure the following actions are taken: (1) isolate in cabin or designated restricted area until symptom-free for a minimum of 24 hours; (2) follow-up with and receive approval by designated medical personnel before returning crew to work; (3) document the date and time of last symptom and clearance to return to work.

Six cases of water were stored on the deck in the doctor's office. Additionally, six cans of soda were stored on boxes filled with medical supplies inside the medical storage room. The inspector talked to staff about ideas to properly store water and soda.

Recommendation:
Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; and (4) At least 15 centimeters (6 inches) above the deck.
Do not store foods: (1) In locker rooms; (2) In toilet rooms; (3) In dressing rooms; (4) In garbage rooms; (5) In mechanical rooms; (6) Under sewer lines that are not continuously sleeve welded; (7) Under leaking water lines, including leaking automatic fire sprinkler heads, or under lines on which water has condensed; (8) Under open stairwells; (9) Under other sources of contamination from nonfood items such as ice blocks, ice carvings and flowers; or (10) In areas not finished in accordance with 7.7.4 and 7.7.5 for food storage areas. Protect food from contamination that may result from a physical, chemical, biological origin.
