Site: Pantry-Deck 9 House Keeping
Violation: The backflow prevention device for the pantry ice maker was corroded and the device holes were blocked. A proper visual inspection could not be conducted to see of the device was dripping water. Remediation began immediately.
Recommendation: Maintain backflow prevention devices in good repair.

Site: Recreational Water Facilities-Forward, Mid, and Aft Pools
Violation: For all three (3) pools, the water level was not at the skim gutter level; therefore the water was not draining sufficiently. At all three (3) pools, the bulkhead surrounding the pool is bent in specific areas to allow for draining; however, this is insufficient. Proper drain slats need to be installed to allow the water to drain consistently from all areas of the pool. Staff and the inspector discussed a plan for the upcoming dry-dock in March.
Recommendation: For RWFs with skim gutters, ensure that the fill level of the RWF is to the level of the skim gutters. Design recirculation systems and equipment, including chemical control equipment, UV disinfection systems, filter, and pumps to maintain adequate water chemistry control while operating at the following minimum turnover rates: (1) swimming pool (VSP 2005 Construction Guidelines or earlier): 6 hours; (2) swimming pool (VSP 2011 Construction Guidelines or later): 4 hours; (3) children's pool: 0.5 hours; (4) wading pool: 1 hour; (5) whirlpool spa: 0.5 hours; (6) spa pool: 2 hours; (7) interactive RWF or activity pool less than 610 millimeters (24 inches) deep: 1 hour; (8) interactive RWF or activity pool greater than 610 millimeters (24 inches) deep: 2 hours; and (9) baby-only water facility: 0.5 hours. Ensure an RWF slide that is combined with a pool has a turnover rate that matches the rate for the pool. This applies to wading or swimming pools but not to children's pools. The water for the slide must come directly from the basin of the pool and return directly to the basin of the pool. Flow rates from flow meters must be used to calculate turnover rates. Apply the most protective turnover rate for facilities that meet the definition of more than one type of RWF.

Violation: A walk in freezer in this area had a significant amount of frost buildup on the interior of the freezer and also on the products inside the freezer.
Recommendation: Protect food from contamination by storing the food: (1) Covered or otherwise protected; (2) In a clean, dry location; (3) Where it is not exposed to splash, dust, or other contamination; (4) At least 150 millimeters (6 inches) above the deck; (5) At least 127 millimeters (5 inches) for food in packages and working containers on pallets, skids, and racks; and (6) At least 150 millimeters (6 inches) above the deck on shelving racks.

Site: Pantry-Deck 9 House Keeping
Violation: A slotted screw was on the cube sensor device. This unit had a recirculating bath. Remediation began immediately.
Recommendation: Ensure multiuse food-contact surfaces are: (1) Smooth; (2) Free of breaks, open seams greater than 0.8 mm (1/32 inch), cracks, chips, inclusions, pits, and similar imperfections; (3) Free of sharp internal angles, corners, and crevices; (4) Finished to have smooth welds and joints; and (5) Accessible for cleaning and inspection by one of the following methods without being disassembled, by disassembling without the use of tools, or by easy disassembling with the use of handheld tools commonly available to maintenance and cleaning personnel. Use only low profile, nonslotted, noncorroding, and easy-to-clean fasteners on food-contact surfaces and in splash zones. Prohibit the use of exposed slotted screws, Phillips head screws, or pop rivets in these areas.

Violation: There were a significant number of chips noted in the glass sneeze guard over the buffet line during breakfast service. Crew stated that much of this area will be renovated during the dry dock this month.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Pantry-Deck 9 and 8 House Keeping
Violation: The ice machines in the deck 9 and 10 pantries had a dark film on the surface of the recirculating bath tray. Staff stated the cleaning chemical leaves this film residue. All other aspects of the machines were clean to the sight and touch.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch. Ensure food only contacts surfaces of equipment and utensils that are cleaned and sanitized.

Site: Bar-Sunset
Violation: Approximately 6 drinking glasses out for service on the counter were soiled with food debris while the bar was open. These were removed to be rewashed.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Site: Provisions-Frozen Fish
Violation: The feet of a deck stand were facing inward under pallets of frozen fish in this area. The feet were not in contact with any food containers.
Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck unless in packages on pallets, skids, or racks, which may be 127 millimeters (5 inches).

Violation: The grout on the deck in this area was recessed and in need of repair.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning.

Violation: The grout on the deck in this area was recessed and in disrepair. In one location water squirted up through a hole in the grout by the handwash station. This specific area was repaired before the conclusion of the inspection.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning.

Violation: The grout on the tile at the port side grill area was recessed and in need of repair. Crew reported that a deck project is planned for the dry dock.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning.

Violation: The light fixture port side above the handwash sink contained water. No water was observed dripping onto the deck.

Violation: Excess steam was exiting the dirty end of this machine while in use. Such a large amount of condensate was collecting on the deckhead it required a crewmember to continuously wipe the area above the dirty end of the machine. No clean dishes were impacted. Crew stated this machine will be replaced in dry dock.
Recommendation: Ensure ventilation hood systems and devices operate effectively to prevent grease and condensate from collecting on the bulkheads and deckheads and remove contaminants generated by equipment located under them.

Violation: One fruit fly was observed when the inspector opened the cabinet under the aft port coffee station during breakfast service.
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.

Site: Children Area-Cadets Room Couch
Violation: The cadets couch had a felt-like fabric over the back of the couch. This fabric was not smooth and is difficult to clean. This room was normally used for kids six (6) years or older; however, during low enrollment in the child areas, this area was used for younger children as well.
Recommendation: Ensure surfaces of tables, chairs, and other furnishings that children touch with their hands are cleanable.
