A crew member with reportable acute gastroenteritis (AGE) symptoms began isolation after reporting to the medical center on 3 September at 17:55, but the first interview with the crew member's two cabin mates did not take place until 4 September at 08:01.

Recommendation:
When any crew member (food or nonfood employee) meets the case definition for AGE, take the following actions: (3) complete a verbal interview daily with medical or supervisory staff until 48 hours after the ill crew members? symptoms began. Ensure that the first verbal interview is conducted within 8 hours from the time the ill crew member initially reported to the medical staff. If the asymptomatic immediate contact or cabin mate is at work, ensure that he or she must is contacted by medical or supervisory staff as soon as possible. Document the date and time of verbal interviews.

Violation:
The inspector and crew member each took three water samples at the far point and measured free halogen residual values of 0.88 ppm, 1.25 ppm, and 1.27 ppm, and 1.21 ppm, 1.25 ppm, and 1.24 ppm, respectively. The digital analyzer displayed a value of 1.53 ppm during all three tests. The far point was recalibrated to 1.25 ppm.

Recommendation:
Ensure the free residual halogen measured by the halogen analyzer is within 0.2 mg/L (ppm) of the free residual halogen measured by the manual test.

The distance between the halogen injection point and the sample point on the production line was 6.5 feet. Staff stated no static mixer was installed between the two points.

Recommendation:
Obtain water samples for halogen and pH testing from a sample cock and/or a halogen analyzer probe located on the bunker or production water line at least 3 meters (10 feet) after the halogen injection point and before the storage tank.

The potable water lines in the aroma therapy machinery rooms (FSD 15.2.05 and 15.2.06) were not striped blue or blue/green/blue to indicate potable water.

Recommendation:
Stripe or paint potable water lines either in accordance with ISO 14726 (blue/green/blue) or blue only. Stripe or paint these lines at 5 meters (15 feet) intervals and on each side of partitions, decks, and bulkheads, except where decor would be marred by such markings, including potable water supply lines in technical lockers. Do not stripe or paint potable water lines after reduced pressure assemblies as potable water.

The top compartment of the ice machine was not working and the cuber tray could not be lowered for inspection. The bottom compartment had an excess of brown and black debris located on the cuber tray side wall and on the cuber tray surface.

Recommendation:
Food contact equipment must be maintained in good repair and proper adjustment: (1) Equipment must be maintained in a state of repair and condition that meets the materials, design, construction, and operating specifications of these guidelines; and (2) Cutting or piercing parts of can openers must be kept sharp to minimize the creation of metal fragments that can contaminate food when the container is opened.

The door mounted bulk milk dispenser temperature gauge read 45F, but the inside thermometer was reading 34F. The inspector measured the inside temperature at 34.8F. The gauge was calibrated during the inspection.

Ensure ambient air temperature measuring devices are maintained in good repair and are accurate within the intended range of use.
