Item No.: 13
Site: Galley-Dishwash Area
Violation: A crew member was observed placing his pair of reusable green dishwashing gloves in the handwash station receptacle, washing his hands, retrieving his gloves from the waste receptacle, and returning to work. This crew member worked on the soiled side of the operations.
Recommendation: Because of the risks for foodborne illness inherent to the food operation, ensure the supervisor or person in charge of food operations on the vessel demonstrates to VSP - during inspections and on request - knowledge of foodborne disease prevention, application of the Hazard Analysis Critical Point principles, and the food-safety guidelines in this manual. Ensure that the person in charge demonstrates this knowledge: (1) By compliance with these guidelines.

Site: Galley-Dishwash Area
Violation: Two round silver trays were had been placed on the edge of one of the handwashing sinks of the three-sink station at the soiled drop off. These were removed immediately.
Recommendation: Ensure handwashing facilities are used for no other purpose and are accessible at all times.

Site: Other-Neptune Lounge Locker
Violation: An umbrella was stored in the corner of the food and food equipment storage locker. The umbrella was removed.
Recommendation: Ensure maintenance tools such as mops, brooms, and similar items are stored in a designated locker so they do not contaminate food, food-contact surfaces of utensils, and equipment, linens, and single-service and single-use articles.

Site: Galley-Deck 3 Potwash Area
Violation: Trolleys with soiled items for the potwash were stored directly adjacent to the combination oven with no separation. Food was being cooked in the combination oven. The soiled items were moved to another area.
Recommendation: Ensure drainboards, utensils, racks, or tables large enough to accommodate all soiled and cleaned items that may accumulate during hours of operation are provided for necessary utensil holding before cleaning and after sanitizing.

Site: Buffet-Petty Officers' Mess
Violation: One of the side shields for the portable sneeze guard was cracked.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance.

Site: Galley-Dishwash Area

Recommendation: Do not place reusable gloves in the waste receptacle unless they are being discarded.

Violation: The doublecheck backflow device located behind the glass crusher on the lower line had a minor leak.
Recommendation: Maintain backflow prevention devices in good repair.
