Site: Galley-Deck 3
Violation: On both the port and starboard ice machines, a bar code sticker was on the inside of the plastic ice deflector panel.
Recommendation: Materials used in the construction of multiuse utensils and food contact surfaces of equipment must be: (1) durable, corrosion resistant, and nonabsorbent; (2) sufficient in weight and thickness to withstand repeated warewashing; (3) finished to have a smooth, easily cleanable surface.

Site: Galley-Deck 3 - Potwash
Violation: According to the hood-type potwash machine manufacturer's data plate, the wash times were 204, 324, and 444 seconds depending on the cycle selected. As the inspection team operated the machine at both cycles #1 and #2, the wash cycle was less than the specified time. For example, at cycle #2 (324 seconds = 5 minutes, 24 seconds), the wash cycle operated for 3 minutes, 40 seconds. The final rinse operated according to the manufacturer's specified time.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines.

Site: Galley-Deck 5 - Dishwash
Violation: Old food debris and oily residue were on the bottom inside surface of three in-use clean plate trolleys.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Site: Buffet-Windjammer - Portside Beverage Station
Violation: The juice dispenser splash area above the dispensing nozzle was soiled with more than a day's accumulation of dried juice residue. The crew started cleaning this immediately.
Recommendation: Ensure food contact surfaces of equipment and utensils are clean to sight and touch.

Site: Pantry-Deck 5 - Champagne Bar
Violation: Receptacles containing food and beverage wastes were uncovered when not in use. The bar was in operation, but no crew members were in the pantry during the inspection.
Recommendation: Cover receptacles and waste-handling containers when not in continuous use and after they are filled.

Site: Galley-Deck 3
Violation: The lock was missing on the door to walk-in refrigerator #3955 and the inside walk-in freezer, exposing a hole.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, bars, and food and equipment storage areas are constructed and maintained for easy cleaning.

Site: Other-Deck 8 - Chop's Grille
Violation: The inspector measured 29 lux to the right of the coffee cup warming station.
Recommendation: Ensure the light intensity is at least 110 lux (10 foot candles) behind and around mounted equipment, including counter-mounted equipment.
