According to the hood-type potwash machine manufacturer's data plate, the wash times were 204, 324, and 444 seconds depending on the cycle selected. As the inspection team operated the machine at both cycles #1 and #2, the wash cycle was less than the specified time. For example, at cycle #2 (324 seconds = 5 minutes, 24 seconds), the wash cycle operated for 3 minutes, 40 seconds. The final rinse operated according to the manufacturer's specified time.

Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines.
