Site: Potable Water-Deck 0 Starboard Side Potable Water Hoses
Violation: The Potable Water Only labeling for one potable water hose in the Remote Hydraulic Station 3 locker was faded and difficult to read.
Recommendation: Label potable water hoses with the words ?POTABLE WATER ONLY? in letters at least 13 millimeters (0.5 inch) high at each connecting end.

Violation: The consumer advisory at the point of service for salmon benedict did not include a specific statement that stated the eggs and salmon were cooked to order or served raw or undercooked.
Recommendation: Ensure the disclosure at point of service is on a sign describing the animal-derived foods (e.g., ?oysters on the half-shell,? ?hamburgers,? ?steaks,? or ?eggs?); AND that they can be cooked to order or may be served raw or undercooked; AND a statement indicating that consuming raw or undercooked meats, seafood, shellfish, eggs, milk, poultry may increase your risk for foodborne illness, especially if you have certain medical conditions.

Violation: Two small fruit flies were on the cantaloupe melon slices at the forward starboard line. Staff immediately removed the melon slices.
Recommendation: Protect food on display from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; self-closing hinged lids; or other effective means. Install side protection for sneeze guards if the distance between exposed food and where consumers are expected to stand is less than 1 meter (40 inches).

Violation: Three raw wood pallets with approximately 192 cases of bottled water were stored in an unfinished corridor outside of the aft port side bunker station. These items were provisioned during homeport two days prior to the inspection.
Recommendation: Ensure nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: The sealant on the front side of the stacked conveyor type pizza ovens was in disrepair, which created a difficult to clean surface.
Recommendation: Ensure nonfood-contact surfaces are free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. Ensure nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: Two large pans were nested together in the sanitizing compartment of the pot wash. Inspector and staff discussed sanitation methods and the pans were separated for proper sanitization.
Recommendation: Sanitize food-contact surfaces of equipment and utensils.

Violation: The countertop to the left of the coffee machine was soiled with coffee grounds. The area was not in operation and had been previously cleaned and sanitized.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The deck was soiled with food debris behind the fixed racks of clean glasses in the bar dishwash area. The area was not in use and had been previously cleaned.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: The bulkhead tile to the right of the toast station at the corner's bulkhead/deck juncture was in disrepair which created a gap and difficult to clean surface.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair.

Violation: The water supply line for the biodigester was leaking and water was pooling on the deck. Staff immediately turned off the biodigester and cleaned the deck.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.
