Site: Bar-Deck 5 - Razzle Dazzle
Violation: The dipper well was not protected from possible contamination from passengers who could stand less than one meter away.
Recommendation: Protect food on display from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; self-closing hinged lids; or other effective means. Install side protection for sneeze guards if the distance between exposed food and where consumers are expected to stand is less than 1 meter (40 inches).

Recommendation: During service, ensure the food contact portion of each self-service food dispensing utensil is covered or located beneath shielding. Ensure that dishware, glassware, and utensils out for service are inverted or covered.

Violation: Sealant was missing along the right tilting pan bulkhead juncture creating open seams that were difficult to clean.

Violation: The black tape around the insulated drain line and the foam around the soda drain lines were in poor condition.

Violation: The rack-type glasswash machine was out of service since the morning of the inspection.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Violation: The hood-type potwash machine was out of service since 20 May 2024. Staff explained spare parts were to be delivered on 10 July 2024.
Recommendation: Maintain warewashing equipment in good repair and proper adjustment, including: (1) warewashing equipment is maintained in a state of repair and condition that meets the standards of the materials, design, and construction of these guidelines; (2) water pressure and water temperature-measuring devices are maintained in good repair and accurate within the intended range of use.

Violation: The top of the paper towel dispenser at the handwashing station was soiled with more than a day's worth of accumulated dust.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: More than a day's worth of grease residue was on the exhaust hood overhang above the deep fat fryer. The area was not in operation and cleaning started immediately.
Recommendation: Ensure nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: At least 12 glasses were stacked wet on the service line. Moisture was trapped in the bottom of the glasses because they were stacked in a manner that prevented air-drying.
Recommendation: After cleaning and sanitizing, ensure equipment and utensils are air dried or adequately drained before contact with food.

Violation: Numerous previously cleaned and sanitized silver trays were stacked wet on the food service counter.
Recommendation: Store clean equipment and utensils in a self-draining position that allows air drying and covered or inverted.

Violation: The decorative black and white bulkhead was damaged in many areas.
Recommendation: Ensure decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are maintained in good repair.

Violation: Water dripped from the deckhead hatch onto the deck next to the chemical locker. A technician opened the hatch and did not see condensation. No further dripping occurred.
Recommendation: Ensure decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas are cleaned as often as necessary.

Violation: Standing water pooled in the clogged drain under the utility sink along the back counter. This was corrected before the end of the inspection.
Recommendation: Ensure a plumbing system in a food area is maintained in good repair.

Violation: Several flies were noted in food areas including: The Wake (1), The Wake grade manager caged dry storage (1), galley of Razzle Dazzle (1), galley of Kitchen Table (1), Pink Agave (4), casino bar (2), pantry casino bar (2), galley of Gumbae (1), lido galley (1), Dock galley (1).
Recommendation: Effectively control the presence of insects, rodents, and other pests to minimize their presence in the food storage, preparation, and service areas and warewashing and utensil storage areas aboard a vessel.
