Violation: The back of the ice machine cuber deflector panel had a sticker that made the surface difficult to clean.
Recommendation: Materials used in the construction of multiuse utensils and food contact surfaces of equipment must be: (3) finished to have a smooth, easily cleanable surface.

Site: Galley-Gigi's Pizza Galley
Violation: Two bags of cubed mozzarella were stored on a portable cart and were not labeled for time control. A team member explained the area had been in service for one hour. The bags were labeled with the 4-hour discard time according to the time control plan.
Recommendation: If time only-rather than time in conjunction with temperature-is used as the public health control for a working supply of potentially hazardous food before cooking, or for ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption, ensure the food (1) Has an initial temperature of 5C (41F) or less or 57C (135F) or greater before placement on time control. (2) Is not be placed on temperature control again. (3) Is marked, or otherwise identified, to indicate the time 4 hours past the point in time when the food is removed from temperature control (if the time between service set-up and closing is greater than 4 hours). (4) Is labeled with a 4-hour discard time if containers of potentially hazardous foods on time control are placed on preparation counters, even if the outlet is open less than 4 hours. (5) Is discarded within 4 hours of placement on time control. and (6) Is labeled with a 4-hour discard time if time control unit (bain marie, cold basin) meant to be cold holding or hot holding and not operational or used as intended, as the unit is now considered a counter.

Recommendation: Store cleaned equipment and utensils, laundered linens, and single-service and single-use articles: (1) in a clean, dry location; (2) in a location where they are not exposed to splash, dust, or other contamination; (3) at least 150 millimeters (6 inches) above the deck unless in packages on pallets, skids, or racks, which may be 127 millimeters (5 inches).

Recommendation: Ensure maintenance tools such as mops, brooms, and similar items are stored in a designated locker so they do not contaminate food, food-contact surfaces of utensils, and equipment, linens, and single-service and single-use articles.

Violation: The exit did not have a sign advising passengers to use a towel to open the door or to prevent the handling of the door with bare hands.
Recommendation: Post a sign advising users of toilet facilities to use hand towel, paper towel, or tissue to open the door unless the exit is hands free.

Site: Potable Water-Production
Violation: Potable water production records indicated the water was not continuously halogenated above 2.0 ppm for durations near one hour or greater on multiple occasions from 21 August to 2 October 2022. No notes were on the charts to suggest immediate corrections. Examples of this occurrence include: 21 August from 0145-0400; 13 September from 2130-2315; 26 September from 0030-0130; 30 September from 1845-1930; and 2 October from 0045 -0130. On 21 August, a manual calibration check was recorded at 0145 with a chlorine value of 1.75 ppm. No corrective action was taken, and the residual remained below 2.0 ppm until production ended at 0400.
Recommendation: Continuously halogenate potable water to at least 2.0 mg/L (ppm) free residual halogen at the time of production with an automatic halogenation device that is controlled by a flow meter.

Site: Potable Water-Engine Room - Aft Reverse Osmosis
Violation: The testable backflow prevention device for the aft reverse osmosis unit did not have an effective air gap. A funnel was placed below the relief vent discharge pipe which decreased the dimension of the air gap. Crew corrected the issue by lowering the funnel before the end of the inspection.
Recommendation: Ensure air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 25 millimeters (1 inch).

Recommendation: Ensure the supervisor or person in charge of potable water operations on the vessel demonstrates to VSP-during inspections and on request-knowledge of potable water operations, is able to demonstrate this knowledge by compliance with Section 5 of the VSP 2018 Operations Manual or by responding correctly to the inspector's questions as they relate to the specific operation, and properly trains employees to comply with Section 5 of the VSP 2018 Operations Manual as it relates to their assigned duties.

Violation: The coffee machine was installed without a backflow prevention device. Staff disinfected and installed a backflow device during the inspection.
Recommendation: Protect the potable water system against backflow or other contamination by backflow prevention devices or air gaps. Ensure the permeate lines and distillate lines directed toward the potable water system are also protected.

Violation: Approximately 15 new metal pans wrapped in plastic were stored on the deck. Staff promptly removed the pans to be cleaned and sanitized.

Site: Medical-Acute Gastroenteritis (AGE) Surveillance Log
Violation: On 10 July 2022, the medical log stated a pastry worker met the reportable AGE case definition and worked while symptomatic. The first symptom occurred at 0300 and he/she had 3 diarrhea episodes between 0300 and 1654. The pastry worker started work at 1000, took a lunch break at 1200, and worked while symptomatic until he/she reported symptoms to medical at 1654. A food risk assessment was completed, and the crew member was disciplined.
Recommendation: The food employee's supervisor or person in charge must conduct an assessment of food prepared or served by the food employee while symptomatic and take appropriate corrective actions. Corrective actions taken as a result of the assessment must be documented. Records must be maintained for 1 year and available for review during inspections. Exclude food employees suspected of, diagnosed with, or exposed to any communicable disease caused by Salmonella typhi, Shigella spp., E. coli O157:H7, hepatitis A virus, norovirus, or other communicable diseases that can be transmitted by food, from working in any food or food related areas or operations, including working with exposed food, warewashing, equipment, utensils, table linens, single-service articles and single-use articles. Do not allow the excluded individual to return to the above duties until they are symptom free for a minimum of 48 hours.

Site: Potable Water-Disinfection Records
Violation: Entries for disinfection records on 23 August and 7 October were recorded as a time instead of a halogen residual level.
Recommendation: Maintain documentation of all inspections, maintenance, cleaning, and disinfection for 12 months and ensure it is available for review during inspections. Ensure records include a method of disinfection, concentration and contact time of the disinfectant, and a halogen value of less than or equal to 5 ppm before the tank is put back into service. Document the free halogen residual level.

Violation: The Hydro Pool (Spa pool) had not been drained since 1 September. The spa pool was in use during the inspection.
Recommendation: Change spa pool water as often as necessary to maintain proper water chemistry. Change the water at least every 30 days. Record the date and time of whirlpool spa and spa pool water changes in the log.

Violation: Records did not indicate weekly sanitization of the two private whirlpools for 1 October 2022. Staff stated they were completed, however this was not documented,
Recommendation: Clean and disinfect private whirlpool spas located in individual passenger cabins, including associated recirculation systems, between occupancies or weekly, whichever is more frequent. Ensure disinfection is accomplished with an appropriate halogen-based disinfectant at 10 ppm for 60 minutes, or an equivalent CT value. Maintain a record outlining the frequency of cleaning and disinfection. Ensure the record includes the type, concentration, and contact time of the disinfectant. Retain records on the vessel for 12 months.
